Chit Chat / Dense Rock-hard Hot Cross Buns

It’s been a very long time since I posted on here and have not used TM5 much either.

Anyway, I was craving hot cross buns and made a batch using Chookie’s recipe, which I have made successfully in the past. However, the bottom on the latest batch were black and the buns dense and rock hard. What did I do wrong? Cooked for 20 minutes. I did increase the spices as I like my buns quite spiced. Could this have affected the yeast?

Any thoughts or feedback would be much appreciated. I want to make another batch but want them to be light and fluffy just like the Coles ones.

I recently bought the TM5 and enjoying cooking the TMX way again. But I haven't found the Turbo switch? There's no demonstrations here so you pretty much teach yourself.

News about Thermomix / Problems/errors with the TM5?

I do not wish/choose to live without a TMX or equivalent anymore.

However, I'm reading some very scary and off-putting problems about the TM5 on Facebook. Has anyone here on the forum experienced operating problems that you've had to send your machine away for servicing? I never once had any probs with TM31 in the three years I owned it. Maybe Vorwerk are rushing the build of the TM5 and that's the reason for the problems?

Whilst I would love a TM5, I'm very reluctant to go ahead because of what I'm reading and the fact it will be a mail order purchase (too few consultants in the US and probably won't be any in my area for years to come) so I have to teach myself (no dramas) but also have to organize for servicing if needed by myself, plus pay for shipping which could easily be hundreds of dollars both ways.

Does anyone have any experience or know of others happy or not with the Tefal cooking companion?

I read a post recently where someone suggested a poster check YouTube on how to use a TM5 in the absence of a consultant showing them how. Then I thought, where would we be without YouTube? I largely made this diamond tufted ottoman by watching YouTube. DH and I have added toner ink ($3) to a printer cartridge instead of replacing entire cartridge ($65) and completed myriad other jobs around the house. Whenever we need to learn how to do something, YouTube is our first port of call!

I have been trying to improve my pastry/dough skills and have made several Danish and puff pastry doughs of late.

Just wondering if it's better to work directly on the granite countertops (as I have been doing) or I should use a Silpat? Does anyone have a view?

Chit Chat / Food for camping and hiking

I read recently that you can dehydrate virtually most foods  ( soups, stews, porridge, pasta and sauce, puddings etc) and rehydrate by adding boiling water. This is great for camping and hiking. Apparently pasta that has been cooked al dente, dehydrated and rehydrated again remains al dente.

Has anyone done this or was aware you could do this? This opens up a new world of gourmet possibilities for camping that I didn't know existed!

I bought quinoa for the first time today. A 227gm bag cost me US$7:00, so that's about AUD$8:40. Does it cost this much in Australia?

It's interesting the price differences between here and Aus. During summer, for example, blueberries can be as low as $5 to $6 for a kilo and asparagus would be $2 a bunch, but the bunches here are three to four times the size of bunches in Australia. Asian foods are expensive though as Asia is so far away.

Cakes / Sweet Coconut Buns - Asian Bakery Style

Recipe is from www.thewoksoflife.com (Hong Kong Styled Coconut Buns) so please refer to the site for recipe and directions.

This tastes just like you would buy from Asian bakeries in Chinatown and elsewhere. Very nice. It's Asia's equivalent to sticky buns.

I made it using KitchenAid mixer. It is the coconut filling that makes these but the  recipe didn't make enough so next time I would make 1.5 times the amount of filling.

Chit Chat / TM31 with free jug or TM5? Which would you choose?

I understand the TM5 is likely to be available in the US and Canada by July this year (about CAD$200 more than current price of TM31). In the mean time, however, they are giving away a free jug with the purchase of a TM31 - that's a rare incentive in Canada apparently.

Which would you choose?

Whilst I would love two jugs, I'm also inclined to think the recipe chip would be very useful for me - prefer to read instructions on the screen as opposed to a book. Is the TM5 at a higher price with no incentives worth the wait?

Chit Chat / Dehydrators - Does anyone own one?

I'm addicted to beef jerky at the moment so I'm considering buying a dehydrator to make my own. Does anyone own a dehydrator and/or have any experiences with using a dehydrator that would like to share their experiences/advice please? Naturally, I have googled this, but thought I would try this trusted forum as well.

Bread / Question re Chookie's (David Herbert) Recipe for Naan Bread

Hi all,

Indian restaurant naan breads are generally not golden looking all over, they are more whitish with burnt spots so that's what I'm trying to achieve. As such, I don't want to cook mine in the conventional (fan forced) oven, but will try the pizza maker or on the stove top. We don't have a BBQ.

For those who have made these using the pizza oven, how long have you cooked them for and was it with the lid open or closed?

Would appreciate any advice/tips from those that have made these before. I'm going to make these later today for dinner party tomorrow.

Mandy' Strawberry cheesecake muffins ( by Valli Little)

I'm making these to take out to dinner but the cream won't thicken so I won't be able to pipe like Maddy's did. Can anyone suggest how I fix this please? I'm in the US so maybe it's the cream I'm using. I'm using " heavy whipping cream".  Please help. I really want to pipe the the cream on.

I realise it's the early hours of th morning in Auatralia so not hopeful of response to be honest.

Any advice would be very much appreciated.

Chit Chat / Question for Members Using TMX with Transformer

We will be relocating from Australia to the US and considering taking TMX with us due to the fact they are not available in the US. I'm therefore interested in getting feedback from users who are using their TMX with a transformer.

How has the TMX worked with the transformer?
What kind of tranformer? Is it bulky/ugly/heavy?
Are you using other appliances on transformer as well?

Any advice/feedback would be much appreciated.
