Title: Help with Hollandaise

I have tried twice to make the Hollandaise recipe in the Australian Thermomix book and each time it has come out a nasty, yellow, watery mess!  Has anyone else made it?
Does anyone have any modifications that may make it work?
Help, please?

Check out the latest MONTHLY RECIPE (http://thermorecipes.blogspot.com/2008/10/october-gratin-cups-new-hollandaise.html)  from TMX Oz - Tenina has develped a new Hollandaise.

Also, Dani, from Kitchen Playground, POSTED HERE (http://www.thekitchenplayground.com/2008/about-hollandaise/) about omitting the water - so that may help.

A recipe translated from the french site:

Hollandaise sauce

1 / 2 lemon
3 egg yolks
1 / 2 cup of cold milk
120g cold butter into pieces
Salt
Pepper

Place all ingredients in bowl and mix for 4 minutes at 60°C on speed 6.

Don't use the butterfly if using speed 6 - may try speed 4 with butterfly.

Not sure how it would go, but may be lighter.

Thanks for that Thermomixer.  I will give it another go.

I was a little concerned about both the water and the cooking temp and time - I reduced the water the second time around, but it didn't help.
This is another example of why we need a uniform, standardly tested recipe book.  The existing one is too hit or miss.

I'm subscribed too, and didn't get any notification - but just check every now and then and lo & behold  - a new recipe.

We used to get an email with notification of a new recipe & news for the month - got some news about cooking classes but nothing about the recipe.  ???  Looks like a job for you Karen ???

Hi there Hollandaise cookers! Yes the TM blog does now have an adjusted recipe for Hollandaise. I played around a few times and checked out other countries recipes (in their books) and found them all to be the same! I think how we (in OZ) like Hollandaise is completely different from other countries. Allow me to reassure you that my job is to actually uniformly fix ALL recipes that currently don't work...so (at risk of getting flooded with requests!!!) please send any fix ups, questions or problem recipes to me at recipes@thermomix.com.au and I will in time get to them. I have to say that if there were 5 of me, I couldn't get it all done! So please have some patience....Thermomix are doing their level best to solve these issues and I have to say I enjoy working for them because of their pro-active approach on all these issues. I look forward to hearing from you all...good news and bad!

amanda, i don't think it's a thermomix thing, it's just a blog thing. i have a number i'm subscribed to that never show up in my bloglines reader :(

Thanks Tenina,  what a Pandora's box you have opened - hope that TMX Oz is really proactive & will employ some helpers for you.

Not sure if I should post this in a new thread or not, but we have just put up an email subscription 'thingy' (the official term) from feedblitz, so think that should help all those with subscription issues on the TM blog...please let me know it you subscribe and then get no joy. It should hit your inbox each time a new post is up, so at the moment that is only once a month, but I am hoping to change that in time...once again, email me your ideas for recipes or things you want sorted at recipes@thermomix.com.au
Guess I'll be talking to most of you soon!! (One way or another!)

Thanks Tenina,  great to have your input with these matters.  Looking forward to great things from TMX Oz.  Are you planning any cooking demos?  I know Rick and others are keen to have more advanced classes.

i was told by TM HQ in Perth yesterday that they will be running a christmas cooking class sometime in November for anyone living in Perth, its first in best dressed though so as soon as they announce it ring and book!

ALL TRUE, (late November, early December) and apparently around the country...have a meeting about it today to finalise recipes..sshhhh! It will be good, and we are looking to run some 'Master Classes' next year, so it's all up, up and away!
