Title: Teninas Curry Powder
Post by: Frozzie on October 31, 2012, 02:51:06 am
This was on Tenina's blog some time back.. My noted copy was from beginning of January 2011.. This is the recipe I was talking about on the other topic.. I imagine there is no problem posting it here Tenina as it was available for everyone via your blog.. Let me know if its still there and a link so i can link it to your blog :)) or if you have a problem with this ..

Total time: 9 minutes
Preparation time: 1 minute

Very easy

Ingredients

2 tbsp each of the following;

Ground turmeric
Coriander seeds
Cumin seeds
Fennel seeds
½ cinnamon stick
1 tsp cloves
1 tsp cardamom seeds
2 tsp chilli flakes
2-3 curry leaves

Preparation

Place all ingredients into clean, dry TM bowl and roast for 8 minutes at Varoma temperature on speed 2. When cooked, allow to cool slightly before milling for 10-20 seconds on speed 9 or until finely ground.

Tips

Will store in airtight container for up to 3 months. Use as directed in any recipe that requires curry powder.

I imagine though it wouldnt work as the curry leaves must give the distinct flavour with other spices??? Kaffir being lime but maybe you could create a tasty new spice.. They would have to be dried though..

So do you think this curry powder is far better than any other curry powder recipe we have?  Might be nice for our hampers.

Kim, want me to post some to you?  You should be also be able to get a plant up there as they love the heat and especially humidity.  I have mine in a very large pot as once they are planted they like to send up suckers.  So if you do get one and put it in a pot make sure you put something underneath it ie a brick or you might find the roots go down and you have them springing up everywhere.

Is a curry plant the same as curry leaves? I know that sounds silly but we bought a curry plant and the leaves don't look like the leaves I've purchased at the F&V shop

Wonder, there are 2 types of curry plants.  Have a look at these images (http://www.fotosearch.com/photos-images/curry-plant.html).  The curry plant you use in cooking is the fern shaped leaf not the plant with the yellow flowers.  Hope that is clear.

I had one in france and i dont think long at all.. Mine died just too cold and it was a very small plant .. Think if you have the right climate it would thrive!! Think its alot like an orchid ie not damp soil but very aerated and a warm climate..

I always have this curry powder in my cupboard now.  When I last bought curry leaves I washed and dried those I didn't use then put them in the freezer so they would always be ready for me ... mind you, I haven't had to make another batch since doing this so I am not sure of the results, but I think they should be fine.

Yours looks good, Kim.

Looks good, Frozzie. In Malaysia, we use curry leaves in some fried prawns and chicken dishes. The additional layer of aroma is tantalising.

Frozzie - your curry powder  looks great!!  I had a bit of poke around on google and found this article with some interesting uses for the leaves,  (really interested in the infused oil to brush bread, etc. . . !  Will have to try that!)

Ooo thx gf sounds yum.. Dh loves curry.. For the moment they are washed and dried in a glass container and at worst case ppl say let them. Dry out a bit like bay leaves i guess and use as necessary..

Love that you can lightly infuse inoil first or just add to dishes as an aromatic.... Might try veg with them tonight... Impressed how freshthey have stayed too gf.. Havent wanted to put them in fridge or freezer as it says they lose intensity of flavour..

Where did you get your curry plant.. Im interested in getting one and also a vanilla plant as well askaffir lime... I guess adecent sized nursery..

Thx girls..

Frozzie, I just put them in ziplock bags in the fridge. They last for a couple of months. I throw those that get brown and keep the green ones whenever I take them out for curries. I've bought frozen ones before, but I didn't find them aromatic.

Ah well, there goes my frozen ones.  I'll see what they are like later in the week, but looks like I will have to buy some fresh ones again and simply dry them then put them in jars instead of the freezer.
