Title: Orange and Nut slice
Post by: achookwoman on February 16, 2010, 01:32:38 am

This recipe has been adapted from one by Emma, from 'ourkitchen.fisherpaykel.com'.It is very different to most slices/biscuits in that the orange flavor is very assertive. It is very easy to make in the TMX. and cuts into 16 serves. It has no flour, no cane sugar, no added fats.

1 1/2 cups oats
1 cup almonds,( I used cashews)
1 cup apricots (or other dried fruit)
2/3 cup of coconut
1 whole orange
1/3 cup of honey
1/3 cup of yogurt.
1/2 teasp. Cinnamon or other spice that you like.

Zap nuts not too fine, set aside
Zap apricots with 3 presses of Turbo, set aside
Cut orange into 1/4 and place in bowl.Zap, 10 to 15 secs., speed 9, scrape down.
Add all other wet ingred. and mix speed 5 for 10 secs.
Slowly add 3/4 dry ingreds.speed 1 reverse, until mixed ( about 1 min.)
Remove lid and fold remaining ingred. into mix in bowl

Pour into 20 x 20 cm. cake pan , lined with baking paper, and press down.
Bake at 180 for 30 to 40 mins.or until top is brown
Remove from oven and stand for 20 mins. to cool before removing from tin
Cut when completely cold.

Chookie I need to make something for DH to take to car club tomorrow. I think this will be it. The only yoghurt I have (tomorrow is shopping day) is apricot but that should blend in well.

Cookie,  this slice is very tangy.   When I make it next time I think I will boil the Orange like you do for an Orange and Almond cake.   Let me know what you think.
Trudy ,I had all these recipes on my blog.   My VERY good and PATIENT friend Amanda has been trying to teach me how to transfer over recipes from Blog to Forum.  So far I can transfer the recipes,  but have had trouble doing the link back to a particular recipe.  I am not cleaver like Thermomixer and Judydawn.   Although I have Photos on my Blog, ( I am trying to match each recipe with a photo),  it will be some time before I can do this for the Forum.

Chookie I have just put this slice into the oven.  Of course I had to have a taste of it raw. I really didn't want to cook it, I would be more than happy to have it for breakfast or any time of the day by the spoonful. Next time I feel like Bircher for breakfast I will make this instead of my usual recipe.

As you said the orange flavour was very intense I made a couple of alterations. I zested the orange and then peeled it and only blitzed the inside of the orange. When it's cooked and cooled I will photograph it.
Thanks you so much for this, although my hips so No!

Cookie ,  I think your adaption would be very good.   I gave some of the slice to a friend and she thought the taste was good but the texture a bit soft.    Let me know what you think.   I agree the uncooked mix is good enough to eat.

Chookie I like the texture of the slice. The nuts offer some firmness to it. If I was judging it I would give it 6/5. ;D

Great call cookie1 - the nuts do give these something else.  Same with the zucchini cake/bread that I still haven't posted on here !!  The walnuts actually make it for me.

Good work Chookie - you are pretty "cleaver" really  :-* :-* :-*  Wish my mum had cooked like you  :-* :-* :-*
