Title: Apricot & Almond Cheesecake Balls

The recipe is from the Best Recipes site and made in the tmx.

Apricot & Almond Cheesecake Balls.

250g cream cheese softened
150g dried apricots
110g slivered almonds
150g white chocolate melted.  I did this in the microwave.

Place the almonds in the  *: and chop for a few seconds, you still want small pieces of almonds not powder.  Set aside.
Place the apricots into the  *: and chop 10 seconds speed 6 or until finely chopped.  Set aside
Place the cream cheese into the bowl and mix 20 seconds speed 5.
Add the apricot pieces and melted chocolate and mix 10 seconds speed 4.
Put the mixture into the fridge for about 15 mins. to harden up a little.
Roll teaspoons of mixture into balls and then roll them in the chopped almonds pressing the almonds on lightly so they stick.
Refigerate until firm.

Next time I think I will add the finely chopped almonds to the mixture and then roll the balls in coconut.

Lucky it wasn't me making them, I would have probably eaten fat too many.

I can see your idea of rolling in coconut instead of the almonds would be easier Margaret.  Bet they were tasty.

They were very nice Judy, but I was good and only had one.
