Apple Nut Cake (egg free) with photos

Apple Nut Cake
Converted from the The CWA Cookery Book :)

Ingredients:
400g warm stewed apple (see note below)
125g butter, softened
200g sugar
300g SR flour
20g cocoa
1/2 tsp nutmeg
1/2 tsp cinnamon
1 tsp bicarb soda
80g chopped nuts (I used macadamias)
90g raisins or sultanas

Method:
1. Preheat oven to 180 degrees. Grease and line a cake pan (the recipe doesn't specify size so I used a 20cm and it was very full,; if you want a flatter cake use a wider pan).
2. Chop nuts if not already chopped.
3. Cream butter and sugar for 10 seconds/speed 4. Scrape sides of bowl and repeat until light and fluffy.
4. Add all remaining ingredients and mix briefly with spatula. Mix for 20 seconds/reverse + speed 4, give another mix with spatula. Mix for a further 20 seconds/reverse + speed 4 or until combined.
5. Pour mixture into prepare pan and bake for approximately 45 minutes or until a skewer comes out clean (mine took about an hour).

Note about apple
I stewed my apple first in TMX. I had seven small granny smith apples, which, after being peeled and cored, weighed 700g. I sliced them quite thinly and stewed them with 50ml water and 50g sugar for 20 minutes/80 degrees/reverse + soft speed. I set them aside to drain, washed the TMX and proceeded with the recipe above. I ended up with some apple leftover so next time I will stew less.

Oh this looks yummy! And being from the CWA book it must taste as good as it looks...certainly one for my ever growing 'to do' list...I even know who I will serve it to.
I have a Facebook page with all things cooking, you'll find it here: https://www.facebook.com/What-Amber-Ate-1097437023601587/

Thanks Jam :) I love it when you find a recipe and know who to cook it for ;)
I'm always scared of cooking things from my CWA book because there are no pictures... but occasionally I'm brave and pick something from it ;D

Those CWA ladies sure can cook Amy so you just have to trust the recipe - photos are good though  ;)

Great cake Amy. Love CWA recipes but don't have a copy of their cookbook.  Looking forward to trying this, thanks.

Thanks Kimmy :) I'll put a note in my Secret Santa spreadsheet that you don't have a CWA cookbook ;D

Chookie, my pleasure, hope you enjoy :)

Judy, I rarely cook recipes without pictures but I think I'm missing out with the CWA book :-)) I need to build up some courage ;)

My Mum used to make this Amy and it sure is nice.
Do you have a Golden Wattle cookbook too?  Very useful for basic things.
May all dairy items in your fridge be of questionable vintage.

Yes, we have a Golden Wattle cookbook ;D I love old cookbooks, I find them really interesting. I find there's less blabbering by the authors and more useful tips and information :)

For some reason I'm really excited to know that your mum used to make this cake cookie ;D

Presbyterian Women's Missionary Union.

The cookbook was first published in 1904. Its been updated since then ;) Nan had one, mum had one and when I moved out I bought one too. Simple old style recipes.
