I just stuff a few herbs and garlic up the chook with a slice of lemon and liberally coat with garlic oil.

Garlic and ginger in cavity,  sometimes lemon, lots of salt and pepper over bird.  Sometimes a handful of herbs from garden.

I picked up a Philips XL yesterday.  they are in the new Good Guys catalogue for $349.  Harvey Norman said $340.  Then there is the $50 cashback offer through philips, so effectively $290.  Looking forward to try some of the awesome recipes in the this thread.

BZB, our fav is a lemon hakved in cavity, rub a little olice oil over & sage leaves.

I also do mixed herbs from garden, but always a lemon as it helps keep the chicken moist, unless I am doing a stuffing.

2 types sage & onion or sausage stuffing.

Does the roast become overly lemony/sour, Cookie and Hally?

Was running short of time to make dinner tonight. The afternoon was filled with cooking fries, mochi cheese puffs and choc chip muffins. Left me with very little time to make a more elaborate airfried toothfish.

I just scaled and cleaned the cutlets. Pat dry and drizzled with soya sauce. Placed in my new (and cute) baking dish. Preheated AF to 180c. Cooked for 5 mins. Flipped over. Another 5 mins. Then finished off with 2 mins of 200c.

The flavour of the fish was fabulous. Delicate, silky...just beautiful 😋😋

I had never heard of this fish BZB and wanted an alternative to add to the times listing for those who couldn't find it in their markets.
This is the story of the Toothfish.

The Patagonian Toothfish is caught by trawl fisheries in deep water in the remote Southern Ocean. It is thought to live up to 50 years and can grow as large as 2m and over 100kg, though is commonly caught at around 2-5kg. Legal fishing is strictly controlled, but illegal fishing does occur. The Patagonian Toothfish fishery around Prince Edwards and Marion Islands was fished to commercial extinction in only 2 years.

The majority of the fish caught by Australian boats is sold overseas to Japanese and US markets.

Though unattractive whole, when filleted the fish yields a large firm very white piece of flesh with no pin bones, an indication of why it is so popular and valuable to fisheries, especially as a frozen product.

May also be sold as 'Sea Bass', 'Chilean Sea Bass' or 'Australian Sea Bass'.

All toothfish sold in Australia must be documented as legally caught, so no illegal catch reaches our shores.
P.S. It’s probably one to avoid if you’re overseas, as there is a chance that the toothfish may be illegally caught

You're right, Judy. Not a common fish in OZ, but prized in Asia. I used to buy it in the wet market in Malaysia, it's called Cod there. Usually 3-4x more expensive than the average fish cutlets. The taste is very beautiful. Delicate and silky texture, luscious and creamy taste.

Over here, I bought the fish from a wholesaler. They sell frozen fish. Even frozen, toothfish is expensive. $28.80 per kilo of cutlets, with scales on. In comparison, frozen snapper fillets sell at $14.50/kg.

Never heard it called tooth fish but Sea bass yes :) looks yummy.

I love brussel sprouts too. Never had them roasted but they sound divine.
