Chit Chat / Pull out tray for a heavy machine
« on: March 23, 2016, 07:43:54 am »
It may even be a few years ago that I read a post on here describing a tray which sits on the kitchen worktop. The tray had 2 layers the top one of which had the Thermomix (or any other heavy machine) stood on it and  you could pull that layer forward with the machine on it and without  effort leaving behind the other layer which stabilized it. You then just pushed the machine back when finished. What a good idea for under the top cupboard machinery, I thought. I saw that this was sold in America but not in England. Does anyone own one of these and can anyone direct me to a supplier?

This is a 4 portion recipe but I scaled it down to one portion. This is a pleasant smoothie. The oats and nuts content were reduced to being the slightest powder, in fact, almost gone.  I love Cinnamon and nutmeg and it was these that gave it that apple crumble twist. Next time I will use a stronger apple like “Granny Smiths”.  I am guessing that it will be one of those breakfasts that stop any hunger pangs till lunchtime because I am now full and struggling to finish the last inch in the glass.

Diet / My favourite Paleo bread
« on: October 21, 2015, 08:33:59 am »
There are many recipes for Paleo bread. I need a plain white that can be made into mini loaves and frozen and I wanted it to slice well and to be able to spread with butter without it falling apart and finally to taste like bread. (  Here is my favourite that takes just 3/4 hour to make. ) You could double this quantity if you need to freeze a larger amount.

Paleo Sandwich Bread in mini tins

4 Eggs
1/2 cup Applesauce
1/2 Tbs Coconut Oil
1 cups Almond Flour
1 cups Tapioca Flour
1 desertspoons Baking Powder
1/2 tsp Sea Salt

1. Preheat oven to  (190 c).

2. Grease loaf pans or line with parchment paper  When making "minis" like mine, I spray my tins with a cake release spray.

3. Add eggs and apple sauce and coconut oil into the TMX bowl and mix 20secs/speed 3 (don't overmix)

4. Add all the dry ingredients to the egg mixture mix 30secs/speed 4 to a smooth consistency. Stop and scrape down as required.

5. Divide the mixture between the  pans to make loaves. .Bake for approximately 30-50 minutes for loaves or 15 minutes for muffins, or until a toothpick test comes out clean. My general rule of thumb is that when you begin to smell it (provided you have a decent sense of smell), its nearly done and should be checked.

6. Bread will keep for about 5-7 days in a ziplock bag, or you can slice and freeze, toasting individual slices as desired. This is a great recipe to make in a large batch so you can freeze extra loaves and always have something on-hand.

5 stars - This recipe made my 6 mini loaf tins. I found it moist and easy to cut. It tasted really just like plain bread and I was able to spread butter on it without difficulty. - 21/10/2015

Chit Chat / Sealant breaking off.
« on: October 01, 2015, 02:50:19 pm »
Has anybody else had the problem of that  fine line of sealant around the edge of the TM5 breaking off.  I have never had any problems with Thermomixers in  almost 35 years  but now I notice that the sealant is breaking away. I am wondering if anyone else has noticed this.

Microwave Paleo Bread Recipe

This is just the right size for topping with a poached egg. The bread does not taste of almond or coconut. It does have a pleasant taste of a rich bread. It will toast under a grill but I think it will not bare a toaster. It does not have the resilience of bread to stand up to spreading anything other than the gentlest spread (think melted) but when you are a Paleo girl and fancy some instant bread, this is it! I think that I might not have had a hole in my sample (see photo) had I been more careful about putting the mixture into the mug instead of just chucking it in as I did. By the way,  it goes without saying really that the mug needs to be straight sided or at least bigger at the top otherwise your bread will be the shape of the fancy mug and not come out. :-))This is intended to be eaten straight away otherwise put it in a plastic bag because without a crust  it dries out very quickly.

⅓ cup (35 g) almond flour
1 Tbs (5 g)  coconut flour
½ tsp (2 g) baking powder
⅛ tsp (1 g) salt
1 egg,
2 and ½ tablespoons (37 ml) ghee  , melted and cooled

1. Grease a mug.

2. Throw all the ingredients into the Thermomix and mix on speed 3 for say 15 secs

3. Transfer mixture into mug.

4. Microwave for 90 seconds on high.

5. Cool for a few minutes.

6. Pop out of mug gently and slice.

Servings: Yield: 4 small  round  slices

Chit Chat / The Paleo (Caveman/woman) Diet
« on: August 14, 2015, 05:41:30 am »
I am a recent convert to Paleo. It is more to do with healthy living than losing weight. I have however lost significant weight but more importantly am feeling really healthy. I have found that the TMX is so good for Paleo and I have converted many recipes. I am surprised that there is not much said about it so am I the only Paleo convert?

In the absence of cucumber, I added a handful of green grapes to mine. It Has the combination of spinach, mint, ginger ,parsley and ginger that I found the new unique taste in this smoothie. Together they became the conquerors yet not taking anything from the fruit. It would not be a favourite smoothie in my book but I would certainly make it again.

Cauliflower Cheese Page 186 UK TM5 Basic Cookbook
I halved the quantities of this recipe. It was plenty for 2 generous servings. I wondered if it would make any difference to the chip timings but I did not change them and followed the chip and everything came out fine. The sauce was just right and the cauliflower spot on! The next time I make this, I will have to remember to make a soup whilst the cauliflower is steaming as I hate wasting 25 minutes on just boiling water to generate steam.

Five Seed Bread  Page 226

Straight away, I have to admit that mine is a 4 seed bread due to my not having the poppy seeds. My loaf tin is 23 x 12 x8 and so a bit smaller than that suggested so I have made a couple of mini loaves to see how they turn out.
The recipe is quite correct to say the dough is very sticky but the good thing is that you drop it straight into the bread tins and wait 1 hour for it to rise then it is straight into the oven. (no oiled bowl to wash) The bad thing is that you end up with a messy TM bowl to wash instead. After 45 mins rising I started to worry about it staying in the tin and after 54 mins, I bottled out and quickly put it in the oven.
The result was somewhat disappointing as I found the inside to be a bit stodgy and for my taste I think I would rather have my bread without the oats.  It is not inedible but I think that I will be having a difficult job slicing it even though I have an electric slicer. The mini loaves are cute and slice a bit better. All I need now is a mini toaster to match them. I think this recipe needs a bit of tweaking but I am not sure how to do that in this case. Perhaps you may have some suggestions?

Chocolate Hazelnut spread  P 284
Well yes it is quite nice although just very slightly gritty.  I used 50/50 chocolate and have to admit that 100% milk chocolate would be nicer. I used grapeseed oil. Overall I think that this is an expensive and dare I say high calorie recipe. I think I put on several kilos just in scraping out the TM bowl......which is a requirement isn't it?  ??? Chocolate spread is not something I normally buy. I suppose I was tempted because my oven was already hot to toast the hazelnuts in. The consistency was good enough to be piped for those who like to add to a bun. I have to say however that having spent the night in the fridge, it is now solid so I will have to leave it out to warm up again to spread on my toast. I did not have an empty jar to make the photo more attractive so I have used a couple of my little storage pots.

Sandwich Bread Page 220
………an absolutely lovely loaf of bread.  What surprised me was how the job was made easy and quick using the TM5 chip . I did not separate the dough into 3 as suggested but dropped the entire mixture into the tin at the appropriate time. I did this to obtain  uniform slices for the toaster. The texture and taste is fantastic. It is sad that I must freeze some of it to preserve it all. This will be my favourite basic bread.

Vegetable Soup Page 92
This soup became tasty but only because I added 2 generous heaped teaspoons of my vegetable stock paste (page 62) I tasted it before adding any further seasoning which was not needed after my stock paste did the trick. The recipe does not include a stock in the ingredients which it very much needed. I sautéed the onion and garlic with the butter to start with which also adds to the taste. I decided not to blend the soup as I thought that chunky bits would be better rather than a thick pulp. The potato element had thickened the sauce part anyway. All in all I was happy with the finished soup. It made a very good lunch as the main course. I can see this being made often.

Cream of Courgette Soup Page 94
This soup has been moved up to a favourite on my TM5. It is a very pleasant soup. At first I thought it was going to taste bitter like courgette skin or be a bit tasteless and bland and being green doesn’t help but I had all the ingredients so I decided to go ahead. I was surprised at the difference the cream cheese made so I recommend keeping to the recipe. My photo is slightly out of focus but I like a post with a photo.

Potato Cakes Page 184

I made this recipe as per the book/chip instruction. I found the result was too wet but I fried a couple anyway. I overcooked them as you can see because they appeared to be raw in the middle and they didn't hold together. They actually tasted nice but the batter for want of a better word I felt was not pulsed enough. I returned the remaining batter to the bowl and added 15g of  extra corn flour and 15g of oats. I gave it an extra 16 secs at speed 7. This did seem to get rid of some of the liquid but I was not convinced that it looked right. I would be glad of anyone describing just what the batter should look like. I am starting to think that cooked potato should be used and not raw. What do you think?

Codfish with Citrus Butter Page 166
I made this dish yesterday. I found that the fish and potatoes cooked beautifully but the courgettes were a little over cooked. On first tasting I thought the dish quite tasty but then shortly afterwards I became uncomfortable with the high citrus taste which overpowered the rest of the meal. It could be just my taste buds but I don't think I will be repeating this recipe. I would rather use the butter to pan fry the fish with just salt and pepper to taste and maybe add a parsley sauce.
