I didn't end up cooking at all. I suddenly felt really gross and had to have a lie down. My husband had pizza delivered - he won't cook. Will make something yum tomorrow to make up for it.

I love to see the presentation of the meals, thanks Mich.

A couple of nights ago I made the Pumpkin, Ricotta and Spinach Pasta bake from the Vegetarian book of Tenina's. I wanted to use the same cheese as she had instead of ricotta so I made some of that the day before. Tenina calls it Quesco Fresco. It was easy to make and the Bake was absolutely delicious. I will put a review up ASAP. ( that is when the PC is free!)

Tonight we had beef enchiladas using homemade tortillas. Still a winner and regular in our house.

Dinner tonight will be a marinated roast beef with roast potatoes and pumpkin, zucchini slice, curried corn and carrot dish, and steamed bans and broc.  :)
