From my calculations, this makes 3 generous serves at 43 calories a serve. The bonus is that it is extremely tasty and filling. Carbs 7 per serve.
Ingredients.
200g peeled and chopped Zucchini
1 440 g tin of chopped tomatoes with Basil and Oragano.
( OR fresh Basil and Oregano added at end before blitzing. )
3 Massel stock cubes or 3 teaspoons of stock powder.
Method
Add chopped and peeled Zucchini to TMX bowl and cover with water.
Cook 10 minute/ 100/ speed 1
Mix , 1 minute/ speed 9
Add stock cubes, tomatoes and 1/2 can of cold water.
Cook 10 minutes, speed 1
Add fresh herbs if using
Mix 30 seconds/ speed 8.
Notes
Can add 1/4 cup of milk after last mix, stir in at low speed.
Some canned tomatoes has no sugar or salt. Taste and adjust.

I used leftover soup as a base for pasta.
This recipe was inspired by RTE. I usually use Cauliflower as a base for my cream soups. This is lighter and better for Summer

That soup looks and sounds tasty, Chookie. How do you think vege stock concentrate would work in it?

Julie, yes, please do try. It is a pretty powerful drop. I’m thinking of trying the same recipe but doubling the Zucchini. Can’t help myself. Must fiddle even when good. Thought it might be nice served cold on a hot day.

I wondered about serving it cold as well, Chookie, it looks like that kind of soup. I am desperate to try it, but probably won't get a chance for a week or two.

Chookie I was looking for a lentil soup to make tonight but came across this tomato/zucchini soup of yours before I got too far. I decided to use this as a base for my lentil soup. I sautéed onion and unpeeled zucchini to start with then added the other ingredients as well as 1/2 cup of red lentils and a can of water to accommodate that. A nice, thick soup or, as you mentioned, a pasta sauce.

It was very nice Chookie and I’ve frozen one pack for DD1 who I am hoping to see once our border is open to Victorians. I have a whole list of vegetarian soup from the forum to work my way through for her eventually.
