Title: A good summer salad Recipe?

Sorry for being lazy, when I did a quick search for Summer salad, it returned lots of posts.. So starting a new one.

I am keen on making some summer salads this weekend, especially with couscous and beetroot..
Can someone suggest a good recipe? I had one at work last week and would love to have it more often, it had rocket, roasted vegetables and couscous..

The dressing was just perfect, I am not that good at it so any suggestion will be good, Thanks :)

It is best made the day before.
I also love the Beetroot Salad in Tenina's Vegetarian book. ( I think it is in one of her other books too)

Thanks cookie, some nice salads there. So far I've only made the rice salad from your list but the others look very appeaing too.

The beetroot salad in EDC is also good. I add Chia to it. Yum. So quick and easy.

The peanut and soba noodle slaw from the new festive flavour cookbook is really easy and tasty.

@Cookie : all three salads sound great, I think I will start with trying the Brown rice salad :)
@Bootobethin : actually I didnt look into EDC for salad recipes (stupid of me).. I should look at my book more often ;)
@Kimmyh : I dont have the Festive Flavor book but when I did a search online, came up with link, is it anywhere close ?
