We marinated the fillet in rosemary, thyme, garlic and balsamic vinegar with lots of cracked pepper then slow cooked it in the wood oven and served with honey carrots, asparagus and potato galette.

Cookie, is that Tenina's marzipan?  I have her recipe marked so I can make her little stollen cakes (even sourced some candied clemantines as per recipe.)  ;D

Made a trifle this morning and have just put the roast beef in the oven.  Everything else is prepared and ready to go.

Cookie your tomatoes look and sound delicious.

INAID your marinated beef sounds lovely.

The Marzipan recipe is from the old Festive Book that Tenina wrote when she was still at Voerwork JulieO. I've often made it and if I have left overs I cook it as biscuits. It's always worked well for me.
I used it this time to put in a stollen I made the other day.

I'm planning on making a Raw Beetroot Salad in a minute and that will be me done for the day. We are very fortunate as it is beautiful and cool here today.

Yesterday I made this for DH to take to work today as all his shift are taking in food for them to have a little celebration marking the day.  All I had to do today was decorate the top but seeing it's an ice cream pie, he will pop home to pick it up just before lunch.  Luckily they have a freezer as I imagine it will melt quite quickly.   Probably not the best option on a day like today, but he did pick it.  :D

I cut a small slice out for me to try and it really is lovely.  It is rich, so you only need a small slice which is great seeing it's got to serve a few.  ;D

I also made up some capsicum & sun dried tomato dip for him to take in.  :)

Thanks Cookie, I think the recipe I've got is from Merry Christmas Too.  Will have to compare to see if there's any difference.  :D

I haven't cooked much today either - just some custard and a couple of salads. We had a lovely lunch with prawns, smoked fish, a baked ham and salads. I made another frozen cheesecake with passionfruit and topped it with raspberries. Merry Christmas to everyone

Oh yum ES and Julie.
I have eaten plenty and cooked little.  Just a berry glazed ham. Mum did the rest including turkey, pork and all the trimmings. Still can't work out why we do a hot lunch, especially as it reached 37c today, but it was lovely all the same.
Last night we hosted friends for a bbq and not much cooking by me then either. We did make up this yummy platter on my new chopping board.
