Title: Beef hamburgers with a little veg.

Name of Recipe: BBQ Hamburgers

Number of People: 6

Ingredients:

500g lean beef mince
3/4 cup S.R. flour
1 x 45g packet chicken noodle soup
dash curry powder (I used 1 tsp.)
small carrot chopped
1/2 zucchini chopped (roughly 1/2 cup)
1 onion quartered
2 eggs lightly beaten
dry breadcrumbs (I prefer panko breadcrumbs)

Preparation:

First I blitzed the carrot until grated, then added the onion and zucchini and blitzed around 4 seconds, speed 7.
Add all the other ingredients, and mix 10 seconds  :-: speed 4.

The mixture is quite wet, so I scooped the burger size amount, then plonked it onto the plate of bread crumbs.
Roll around to coat the outside and keep in ball shape.
I then refridgerated them for at least 30 minutes, then cook on the bbq or pan, and then flatten slighty.
The burgers will stay in one piece, and not crumble  ;)

Tips/Hints:

I made the quick beetroot hommus with:

1 tin drained whole baby beetroot
1 tin chickpeas, drained and rinsed
1/4 cup olive oil
3 tbsp. fresh lemon juice
cracked pepper.

Blitz all together for around 10 seconds-speed 6.

cottchick - I didn't have the zucchini or the soup mix but these were fabulous hamburgers, thank you!

Jabejak -  it was delicious. I didn't have chicken noodle soup so I used about a teaspoon of Massel beef stock. I also used a whole zucchini and carrot and blitzed them with the onion. I also threw some breadcrumbs in and then coated them with more once I was rolling them into patties. It was a hit with the little ones as they had their own little burgers.

Frozzie - they were delish...no dried soup mix as i don't use it anymore but instead put in about a tablespoon or two of dried fried onion and two tbspns of chicken stock paste and crumbed them...made some smaller ones for the kids and larger ones for us and they were scrummy!  I melted some cheese on the patties, fried some onions and just had baby spinach, tomato and homemade ketchup..mmm thanks maddy.

ES - they were yummy. I had 650g of beef mince that was very lean so I added a whole zucchini and two small carrots and substituted 2 tablespoons of the KFC spice mix instead of the soup mix. I was a bit worried as the mix was so wet but it firmed up nicely in the fridge and I was able to cook them on the BBQ grill without any problems. I served them in Stef's hamburger rolls with egg, fried onions and salad.

That sounds and looks delicious maddy!
I don't use packet soups anymore, so was wondering what I could substitute. Perhaps some vegie stock and very fine dried noodles, broken up?

Thanks Maddy - looks fantastic little combo.

Is there a reason for using SR flour rather than plain flour or breadcrumbs in the hamburger mix.  I don't make many but just thought it sounded interesting - it is likely that it is a special recipe/tip that I am not up to date with - don't get out enough.

It may well make them lighter ?? - is that the trick ?

I could have spun you a yarn about the advantages of using S.R. flour, but honestly......I have no clue......just what the recipe said  ;)  ;D

LOL - you could easily have had me fooled.  I'm sure there must be a good reason.  Think it may make them fluffier - certinly need to investigate.

Maddy, Can you define 1/2 zucchini ? I pick mine at the stage where 1/2 would be 1 or 2 Tbls so I suspect you are referring to a larger one. Say about a cup of grated zucchini in the recipe?

Sounds good and  have some good mince thawing at the moment so will definetly give it a go.

May have to wait for a zucchini to grow a bit.  ;D

Oh.....hadn't thought of size really.
I guess it would be 1/2 a cup, but if there was less or extra.....I don't think it really matters.

a zuchiini to me would be at least a carrot length (20-25cm - at least, and quite fat)
