I have just learned how to make tomato paste - I made this recipe to use up some over-ripe tomatoes, but only had 1kg. So I halved the recipe quantities, but forgot to reduce the cooking time    And at the end of the cooking time, I had thick tomato paste, which could also be used as pizza sauce!  It was so thick that I had to add some hot water just to be able to puree it properly ....  I had been wondering how to make tomato paste - and now I know!

Hi,

I tried making tomato paste a different way today.  I cut 1.5kg of tomatoes in half.  Cooked them on 100C speed 1 reverse for 30 minutes until they were very soft.  Pushed them through a strainer/sieve to remove the skins and seeds.  The resulting goop, I cooked for 2 1/2 hours on 100c speed 2 reverse.  I ended up with a paste that was a little runnier than store bought tomato paste but has a very concentrated flavour.  I probably could have cooked it for another 15 minutes or so to get it a little closer to store bought but it is pretty close.

Tomato paste - to peel - pour boiling water over tomatoes in a bowl and leave 2 minutes then drain and put into cold, icy water - the skin should come away easily.  Don't throw the skins away though - reserve.

To deseed - easiest to cut them in half - across the equator and then remove the seeds with a teaspoon.

Put the seeds and skins into the TMX and cook for 20 - 30 minutes at 90oC on Speed 1.  Then blitz this on Speed 9 for 20 seconds - make sure the MC is in place and cover with a cloth also.  Strain this mix - this is where most of the glutamates are in tomatoes - so all the best flavour.

Clean the bowl and then place your tomato flesh and drained juice and cook that.  Not sure about the time, but best on Varoma temp at speed 3 or 4 to help it to thicken and concentrate.
