Title: Vegetable soup TM5 Australian Basic Cookbook Pge 98

I made this for the first time today and my 2 boys (4 and 1) absolutely devoured it! I used carrots, zucchini and a bit of red capsicum. Next time I make it I would probably follow the variation suggestion and cook the onion and garlic first to bring out the taste a bit more, as I found it needed a bit of seasoning. 4.5/5

I was tempted to make Pumpkin Soup today. I think I will tomorrow, but we will have it cold. I like quite a few soups cold in the summer.

had a look in the book, and now making the tomato soup to get rid of a few tomatoes  :D

I have actually made all the three from the cookbook,

My favorites in the following order :

Best is the vegetable soup with variations (used potato, carrot, zucchini and spinach) - hearty, simple and delicious
Pumpkin soup - good but not up to the mark, need to try tweaking a little bit
Tomato soup - dissatisfied, not sure if I had done something wrong, but it was too watery and bland..

CreamPuff, let me know how you go with the tomato soup :)

I've just made this as a quick lunch. It was very easy to make and only required about 10 minutes of my time and then it cooked while I continued to work. I did use mainly sweet potato instead of normal potato and added capsicum, pumpkin and cauliflower plus coriander instead of the parsley and a full green chilli and I did cook the onion and garlic while I was getting the veggies ready. The soup is really lovely, took no time to make and has used up a number of fridge items that probably would have ended up in the bin.

I also used beef stock and a little water instead of the veggie stock paste because I had some that needed using up.

I made this for lunch today. I just used whatever I had. I ended up including sweet potato as well as bits of broccoli and the broccoli stalk chopped up. It was lovely. I liked how the taste of the one tomato seemed to come through.

I made this today to use up some vegies I had in the fridge - I used celeriac, parsnip, carrot, broccoli  & cauliflowers stalks. I'd did sauté the onions and garlic as per the recipe variation. After I blitzed the soup I added a can of chickpeas for added protein. I've placed it in containers in the freezer for work day lunches. I had a quick taste and it's lovely.
