Crème caramel in the Varoma

Name of Recipe: Crème caramel

Number of People: 4

Ingredients:

Caramel to line 4 ceramic moulds
250 g of milk
2 eggs (60 g)
70g sugar
500 g of water

Preparation:

Pour the caramel into the ceramic moulds (about 3cm high that can fit into the Varoma upper tray). Allow caramel to set.

Once the caramel has firmed place the milk, eggs and sugar in the TMX bowl, mix for 7 seconds at speed 4.

Pour the mixture into the moulds. Cover with a sheet of paper towel (to absorb excess water ) and then a piece of aluminium foil. Place moulds on the tray for the Varoma. Place the tray inside the main section of the Varoma and cover with the lid.


Pour the water into the TMX bowl (you don’t need to clean it out) and position the Varoma on top. Set the Thermomix for 30 minutes at Varoma temperature and speed 1.

Carefully remove the foil and paper to check for firmness. The custard should not be liquid in the centre but should wobble. It will continue to cook a little after removing from the steam so don’t overcook it.

Allow to cool for an hour and then put in the refrigerator for at least another hour.

When ready for service remove from the fridge at least 10 minutes beforehand to allow the custards to warm slightly. Carefully turn on plates, remove the mould and serve.

Tips/Hints:

This is based on a recipe from the Italian "A Tutto Vapore" - equivalent to the "Full Steam Ahead" book that I am yet to get.

This can be made in a single, larger dish - just increase the cooking time by 10-15 minutes

Vivacity, I make a large one and it takes 40 mins, but thats using 4 eggs and 500g milk. I guess with these quantities 35 mins should be more than enough. Possibly 30 mins would do...what do you reckon Thermomixer?

Somebody with the Full Steam Cookbook will be able to confirm - sorry, didn't finish the translation !!!!

Think the original was for a single flan and it was 40 minutes ???

I suppose we could use the recipe for Dulce de lecheyummy caramel here but as it is quite thick, I would cook it only until it was runny sort of caramel. I've never seen liquid caramel here unless they mean caramel topping for ice-cream.  Do you think we could use that?

No, bron put a recipe up somrwhere - I'll find it for liquid caramel.  Otherwise just make caramel as I did for the photos.

Sorry, missed this one.  Yes, you are right 40 minutes for 500g milk and 4 eggs as per the above book.

I was given this recipe in cookery class. How did it go JD? Apparently it can be made without milk and with juice, having tried that, on my list of things to experiment with! ;D

Just for you Bron, I have upended the creme caramel to see how it went (wasn't going to do it until I got home from football later today).  I was quite disappointed in it as the custard had a curdly look about it so is not something I could serve up to visitors.  Tasted OK though - even at 8.30 in the morning! I did it in one of those alfoil containers but think it would have been better in a ceramic dish.  Can't win them all and I have been having a good trot of successes lately so was bound to have a failure sooner rather than later :'( :'( :'( ;D ;D

Shame, I did mine in a foil thingy, wonder why it didnt work, did you make the caramel? Was it the 4 egg recipe?

Yes, I followed your exact recipe posted 31st March but not to worry, plenty of other scrummy desserts still to try. Pavlova will be my next one sometime this week.  Not big on desserts in this house as, although I love them, I end up having to eat almost all of them myself and my willpower is sometimes put to the test - I say to myself  'will I eat that last piece or will I throw it in the bin, my body doesn't need it'.  It's a toss up who wins - me or my willpower ;D ;D ;D

Bron, just had some after tea and found it was only the outside few centimetres which were curdled, the inside was nice and smooth as it should be.  Very tasty.  I have a smallish round casserole dish that will fit into the varoma so will try it in that next time.

For the larger amounts it would probably benefit from something like 100 degrees, speed 2 and for an extra 10 or 20 minutes.  I cook some of the savoury custards at that temp and the gentle cookiing works better.
