Post by: bron on March 31, 2009, 12:54:53 am

Ketchup
750g pear tomatoes
50g red pepper
30g onion
1 garlic clove
10g salt
1 stick cinnamon
1 clove
20g brown sugar
20g honey
40g white wine vinegar

Firstly place in THX tomatoes quartered, red pepper, onion and garlic, and blitz 3 seconds, speed 4, then program 20 mins, Temp Varoma, spoon soft with the basket placed on top of THX (instead of MC) to stop it spitting at you and allow it to reduce!
Please excuse my translating Shocked am trying my best Grin

Then remove basket from lid and place MC, and blitz 1 min, speed 5 to 10. Check and scrape bowl down until all blitzed. You may need to cook some more minutes, depending on water content of tomatoes Huh?

Poke the clove into one end of the cinnamon stick and add this and remaining ingredients and then program 40 mins, Temp 50º spoon soft.
Remove cinnamon stick and store in airtight tupper or jar, leave in fridge for 24 hours prior to serving. Keep in the fridge.

This is first recipe I have seen that uses 50º!!! Shocked Grin Grin Grin

The only times I have used 50 deg was for melting chocolate.  Still, need to try it.
