Title: Fruit Mince Pies - With photo
Post by: JulieO on November 25, 2009, 12:40:20 am
FRUIT MINCE PIES  Filling  for approx 40 patty pan pies
150g sultanas
130g dried mixed fruit
120g currants
1 medium Granny Smith apple, peeled, cored and quartered
ZEST of ½ lemon, + approx 50ml juice (about 1 lemon)
ZEST of ½ orange
½ cup brown sugar
¼ cup brandy
1 tsp ground cinnamon
½ tsp mixed spice
½ tsp ground nutmeg
¼ tsp ground cloves

Filling:
Put quartered apple into TM bowl.  Grate 7 secs/speed 4. Remove to a big bowl. Add lemon juice and stir until combined.

Put all the dried fruit and zest into TM bowl.  Chop for 10 secs/speed 6 or until finely chopped.  Transfer to the big bowl with the apple in it.

Add sugar, brandy and spices.  Stir until combined.

If not using straight away, spoon into a sterilised screw top jar and refrigerate for up to 3 months.
                            ----------------------------------------------------------
Pastry for approx 18 patty pan pies, including star tops

250g plain flour
1 tblsp caster sugar
¼ tsp baking powder
180g cold unsalted butter, cubed
1/3 cup (80ml) iced water
1 tsp vanilla extract

Place flour, sugar and baking powder in TM bowl, and TURBO twice to combine.

Add butter and process approx 5 secs/speed 5, or until just combined

With the motor running, process approx 20 secs/speed 5, gradually adding the water and vanilla through opening in lid, until the mixture comes together to form a smooth dough.
Wrap in plastic wrap and place in the fridge for 30 mins before using.
                           -----------------------------------------------------------
Preheat oven 180°C.

Roll pastry and cut out circles using 7cm flute- edged round cutter. Place into patty pan tin (no need to grease tin if using non-stick pans, enough butter in pastry).  Place in fridge while doing the other tin.

Remove one pan from fridge, and spoon in some of the filling. Put pan back in fridge, do other pan.

Re-roll the remaining pastry and cut out star shapes. Stars should just be touching sides of cases.

Put stars onto baking paper lined tray and put in the freezer for a few minutes where they will firm up slightly.

Remove from freezer, brush stars with lightly beaten egg white, and place on top of the filling.

Sprinkle stars only with a little caster sugar.

Place in preheated oven and cook until golden.

Allow to cool for a minute or two, then remove to a rack to cool.

Sprinkle with icing sugar once cooled.

Notes:

Can be put into a big plastic container with baking paper between layers and then put into freezer.
When required, take as many as you want out and allow to thaw for a few mins (doesn’t take long), then heat gently in the oven just to crisp up the pastry.  They will be good as first baked.

This was the first time I've made them after converting the recipe and I was very happy how they turned out.

The filling is enough for approx 40 patty pan sized ones but you could quite easily double the amount if you wanted more, just need to make more pastry of  course. This pastry didn't 'come with' the recipe, it's a Donna Hay converted one which I find is really nice for these pies and that's why the amounts don't tally up with each other.

It's the nicest fruit mince pie I can say I have eaten.  :)

Never been a fan of bought fruit mince pies but these sound as if they would go down a treat JulieO - well done again.

Hi JulieO,

I would really like to try these as I've never liked the store bought ones either. Am I correct in my reading that neither the fruit mix or pastry are cooked separately prior to assembling and cooking the pies?
Thanks, Nadine

These look great!  DH loves mince pies, and would love it if I made some from scratch for him.

Place in preheated oven and cook until golden.

How long do they take till they're golden, roughly?  Having never made them before, I wouldn't know when to start checking them.

Hi JulieO,

Yes Nadine, you are right.  The worst part of this is if it's a warm day, the pastry really needs to be in and out of the fridge otherwise it will go out of shape, when rolling and trying to put into the little patty pans.  I find the best way is to roll out the pastry on baking paper, cut out the shapes and pull the excess pastry away leaving the rounds on the paper.  Pull this paper onto a baking tray and put in the freezer for about 2 mins, no more or they will be really firm.  Remove and gently lift up and press into the pans.

When I made these last weekend, it was a really cool day and I didn't have this problem, but today being a warm day 30 C, I found this happening.  Got around it okay like I've noted above, so please keep this in mind.  I really like this vanilla pastry and also find it doesn't shrink either if you keep it cold.

Greenjellysnakes, I would say to start checking after about 25-30 mins, depending on your oven.

Lovely JulieO.  I'll make my Mum's fruit mince ( I posted it last year but will update it) and probably use the almond pastry from the EDC. Had our get together today so may be tomorrow.

Bron, I googled it as I empty my spices into containers, so wasn't sure exactly what was in it.  Good luck I hope they work for you.    :D

OMG Julie....its amazing!!! Havent made the pastry yet, but the mince is just out of this world! You must remember this is a very English thing, as here in Spain, you cannot get fruit mince nevermind mince pies!  I havent eaten mince pies for over 10 years! I improvised without the mixed spice, and blitzed 2 cloves, a teaspoon of ginger and some Cardamom (think its spelt like that??) Oh truly it is amaaazing, am hoping to get the kids into bed early, and make the pastry and pies tonight, if not will do them tomorrow! But so far 10/10! :-* :-*

Oh Bron I'm so pleased to hear you like the filling s much as me.  I hope the pastry behaves itself for you too.  Of course you can always use your own favourite one in it's place.   It's hard stopping at just one.   :D

Must say when I was young and heard that my aunt wanted mum to make mince pies for xmas I was a bit surprised.

That was something that she did cook well.  We always had her cook them for us.

Oh Julie, I got the kids and DH into bed and made the pastry! I must admit I was very worried, I even thought that maybe the scales were out or a grain of rice stuck under a foot, as the pastry was soooo different to any other pastry I have ever seen or felt, it was difficult to get out of the THX, but I stuck it in the fridge for half an hour, and although I was expecting an absolute disaster, my scales were perfect and so was the pastry! OMG! Amaaaaaaaazing! Thanks Julie! Although I only managed 12 tarts, maybe mine are bigger? Maybe I could have squeezed 13 tartlets, but 18 how do you manage that? Have already used half the mince with the 12, but I could eat it out of the jar with a spoon.....d-licious!!! :P :P :P Have frozen 4, eaten 2! And have brought the rest to work for some colleagues. A huge success, thanks again! A lovely xmas hamper pressie, a definite MUST for xmas time!

Good to hear they were a success.  Mine are patty pan size, little shallow, rounded pans, not like small muffins which are deeper.  Have put a link so you can get an idea of what I mean.   I can get about 40 of them from the amount of filling.  It doesn't matter because I always find one is not enough anyway LOL.  The pastry can be a little finnicky but it's very nice.

Thanks for trying them Bron, I'm happy that you liked them.  ;D

I was flicking through the Margaret Fulton Christmas recipe book the other night, and she has some identical looking pies. I thought...mmm I've seen these somewhere before...  ;D ;D ;D (If I liked fruit mince I would probably give them a go, but unfortunately not- don't like turkey  :(, shortbread much  :(, christmas pudding  :(, trifle  :( - so I am a bit of a pain in the neck at Christmas time. Did I mention relatives on my husbands side? he he he )

Going to the Chrissy class on Sunday (at Sir Charlies) - can't wait to see the demo's and pick up the new book! Hey, maybe those going from the forum can wear something that we can identify?? I am going by myself so if someone can save me a seat right at the front that would be great  ;D ;D ;D

What a good idea CP! How about a red tshirt? And white trousers? Shame I'm on the other side of the world! Would love to meet you all!

Well Julie, they lasted all of 6 hours! Will be making some more over the weekend, as such an easy recipe. I am a very happy Bron! Thankyou :-* :-*

bron - it may well be how thin you rolled the pastry?

CP I wonder if it's the same filling recipe? (Margaret Fulton).  I got the recipe on-line but with no pastry recipe, so just use the one I use for custard tarts which seems to work well with it.  Have you tried a home made pie?, as I don't like the store bought ones either.  I agree it must make it hard for you at Christmas time if you are being offered all the stuff you don't like. lol  I'm with you CP63  ;D ;D  I'm not particularly fussy with food, but just don't happen to like a few things.......ham, cream, christmas pudding, or trifle   :-)) :-))!!  Suppose it helps me not overeat at chrissy lunch ;D ;D
Hope the chrissy class is good.  Let us know....

I did try to roll them as thin as poss, but the pastry was quite tricky, bet this is a difficult one to make in the heat of the summer, good job my kitchen is cool at the mo!!! I think it must be the size of pies! Plus my stars didnt reach from side to side so I placed 2 stars on each one, very pretty!!! :-)) :-))

I love mince pies.  In fact I love anything with fruit mince.

Unfortunately this year I was told I have high potassium and I have to stop eating certain foods and fruit mince is one of them 😥

But it's christmas ...surely one little mince pie won't hurt 😜

I've been making these and the pastry has been a disaster, either to soft and it just sticks or too hard and it cracks. Maybe I need to use a little flower. I've been working on them for over 1 1/2 hours and I've only got 8 pies. It's just not my day cooking wise today.

It's a Donna Hay recipe for the pastry Wonder.  It can be hard to handle this time of year.  Maybe you could try another pastry recipe?

Post by: Wonder on December 22, 2013, 09:41:14 pm
I'll give it another go tonight and see how it goes if I flour the bench and the dough. It was softer than I remembered even when i made it which was on a cool day so maybe my measurements were off a little. I also used the same trays as I have in the past and they stuck!! I think yesterday just wasn't my day for cooking - for anything really  :-[ Shame I'm working all day today.

I'm glad I still have a big jar of my fruit mince left and some of Tenina's vanilla pastry in the freezer. We have eaten all our fruit mince pies ( with some help of course) so I will make some more over the weekend.

Wow Maddy, they look spectacular!  Love the stand too.  :D

I don't think I've tried Tenina's pastry recipe, I will look for it and give it a go next time I need some.

Maybe I should edit the recipe on this thread just to show the filling and let people choose their own pastry.  I don't like how some have had trouble with this one.  ???

I made these with the pastry a few days ago and didn't have a problem :) it was a hot day so I waited until after dinner and had the air conditioning on as I have trouble with many pastries with the heat :)

BTW, everyone loved them :)

Oh no please don't - I found the pastry very forgiving as long as I only did small bits at a time and kept it in the fridge. I want to be able to find the recipe again next year :)

Some friends and I had a "mince pie cook off" last weekend, and these were the stand out winner! The fruit mince had a very generous slug of brandy, and the pastry was divine!  It wasn't just the magic of the TM, either, as they brought their recipes and ingredients and all the pastry was made in the TM.  :)

I'm sure Julie will be rapt to read that Sue, high accolades indeed.

Thanks for letting me know :)). I'll leave the recipe as is and if anyone who wants to make them reads the whole thread they can make up their own mind as to whether to choose a different pastry or not.   :D

Sounds perfect to me JulieO. I tend to mix and match recipes all the time.

It’s that time of the year again.  It’s taken me 9 years to make this recipe of JulieO’s, I think I put slightly too much fruit mince in mine but other than that I am quite happy with them.  Taking them to the Probus last meeting for the year on Friday - I made 29, one was for the cook and 28 should be enough for the ladies.
