Merry Christmix - Raspberry, Lime & White Chocolate Mousse

I made Tenina's Raspberry, Lime & White Chocolate Mousse yesterday to take to a BBQ today.

I am a bit of a novice when it comes to making mousse and was a little concerned that the mixture was not going to thicken up but the end result looks pretty good.

I used 5 1/2 sheets of gelatine instead of the 3 tsp of powder that the recipe states as my local supermarket only had the sheets.  I also substituted lemon for the lime as that is all I had on hand.

I'll report back on the taste later...

I made this on the weekend too.  It was very easy to make and set well.  Mine only needed a couple of hours in the fridge although the ones that I left till the next day were set even firmer.

To be honest I found the texture a bit gritty.  It did taste nice but everyone thought it needed something more.  I think my main problem was that I made the serves too big.  It would probably be much nicer served in chocolate baskets instead so that you'd have more contrast in the flavours.

Would be interested to hear what the OP thought of the taste.

I think everyone who tried this really liked it - in fact I saw at least one of the kids going back for seconds (and perhaps even thirds) and overheard them saying how yummy it was.

Personally, I am not a huge fan of mousse (its got something to do with the texture) but the bit I tasted was very nice and not at all gritty. 

It's a great dessert to take to a BBQ as it can be made in advance and travels pretty well too.

Maybe the gelatine sheets worked better than the gelatine powder Vieve.

I have feedback about this one needing some sugar. I left it out after two trials (one with and one without) as the white chocolate is practically all sugar anyhoo…but a little sugar may just bring the flavour of the raspberries out a little more, as does the lime juice….

As for gelatine sheets, I prefer them as opposed to powder, but most ppl find them hard to source. You get a much nicer result with sheets texture wise.

I am making this for lunch tomorrow. I plan to keep quiet about the white chocolate in it as one guest is very careful about the fat he eats. One serve won't hurt him.  :) :)

I have just finished making this and licking the bowl of the largish amount I left in there. I put it into 6 dainty glasses for lunch tomorrow and had heaps left. I put that into larger glasses for us to have tonight.
I loved the taste. First I tasted the lime, then the raspberries and finally the chocolate. Perfect. I will of course have to test it again later when it is set, possibly many times.
I used Lindt chocolate. I buy that when it is on special and it is often cheaper than normal chocolate.

I made the mousse for dessert on Christmas Day. I served it in tartlets (first time I had made my own pastry, love it!) they worked well but I couldnt taste the lime, perhaps mine was too small. There was lots of mousse left over, I have put it in the freezer to try as ice cream.
