Well, nana and grandpa are coming for lunch now, so that makes it easy ;D ;D ;D

Slow roasted chicken, mashed potato and cauliflower cheese for mains.
Stewed apple pudding with custard for pudding.

See a theme? ;D

Unfortunately I won't be able to make my little cheesecake case thingys. But that's okay :)

......5 doz cupcakes for a Mother's day high teaa as well as multiple batches of cookies and cream fudge and salted caramel fudge.  I have found the perfect quick butter icing which worked a treat for piping with cupcakes.  I love the cooked frosting in TMX brought to our attention by Frozzie but this is one is great when in a hurry (which is the case most times for moi!!!!). Put all ingredients in TMX - speed 5 - 30sec insert butterfly and beat speed 3 for 30-40 sec - just perfect!!!! Play around with the times if the icing is not smooth - I used room temp butter.

Wow you gave been busy. Lovely cupcake and thanks for the quick butter icing recipe. Will try that, beats using the bench mixer.

Heres is JD BUTTER ICING RECIPE

Chocolate butter cream
125g butter - room temperature
3/4 cup (90 g) icing sugar
2 tblspns milk
2 tblspns cocoa
Butterfly in, speed 4 until mixed, scraping down sides and mixing again.
Mum to Crown Prince......

why so many cupcakes Robyn?...are you catering?

I wish we were going out  :-\  I'll be preparing food still at 2am  :-))  Football took up a lot of the day, then I was distracted shopping, and when I finally got home, had to drive all the way back in to pick up DD as she fell ill whilst skating, then the remainder of the day was gone  :-\

...anyway, cupcakes not long out of oven, made up some crispy olives and about to make some salmon cones (frozzies), and prosciutto roll ups. 
Decided i would make pulled pork for tomorrow's lunch, so getting that together for the slow cooker at midnight.  I'll make some fresh rolls in the morning.  I completely forgot that my Brother also has hemochromatosis, and can't eat pork, so have chicken tenders marinating for a tandoori salad he loves.
I had made fresh ricotta & a cherry compote for a Japanese blossom cheesecake.....but I just cannot be bothered at this point, besides, I remembered there's still 3/4 of a frozen Swedish cheesecake from Easter....so that'll do!
