My Creamy Leeks

Ingredients:


Preparation:

Name of Recipe: Creamy Leeks
Number of People: 3-4 as part of the vegie content of your meal
Ingredients:
200g leeks, sliced 1cm thick (white & pale green part only)
30g butter
50g sliced spring onions (include the green part)
30g plain flour
250g milk
2 tblspns grated parmesan
S & P to taste


Preparation:
Add leeks and butter to TM bowl and sauté 10 mins/100o/reverse/speed 1.
Add the spring onion and flour and cook out for 2 mins/100o/reverse/speed 1.
Add milk and cook 5 mins/90o/reverse/speed 2.
Add the parmesan and S & P to taste.
Mix through for 1 min/reverse/speed 2.

Tips/Hints:

Recipe could be doubled.  
Serve as a side vegetable, as a sauce over fish or chicken or add some chicken to it and top with mashed potato for a pie.
I used to make this years ago but have only just got around to reinventing it.

ES: I made this tonight and served it with salmon and veggies. I used one large leek and onion tops from the garden instead of spring onion. My ThermoChef doesn't have a reverse function, so I popped in the butterfly and cooked on speed 2. I also dropped the temp by 10degrees and cooked it for a minute or two longer.
My DH went back for more sauce as he really enjoyed it, as did I.

Very timely then AB.  You can always slice fresh leeks, place into a ziplock bag and freeze them.  Dad used to give me ice-cream containers full of them years ago.

I didn't know that Judy. They are quite expensive here so I will do that when I can get them  cheaply. The recipe sounds tasty.
May all dairy items in your fridge be of questionable vintage.

Thanks for that freezing tip Judy.

I planted out a punnet of leeks - which was about 100 of the little things. Didn't think half of them would survive when I planted them with one spindly root and my not so gentle poking into the ground!
But they all have and are just about ready for eating, so good to know I can save some for later.

I roast them too.

100 leeks Nikkit ???, you're going to have to become very inventive when cooking with them.  You might need to check some of the recipes on these links  ;D

LOL Nikkit. I know who to ask for advice on growing leeks  ;D

There's a large leek in the fridge to be used before I go away Thursday and this looks like a great side for fish cakes tonight.Thanks JD :)

djinni - errr - not a good idea. I have a brown thumb when it comes to gardening (much to my Mum's disgust as she is an amazing gardener!)
The vege patch is a case of 'plant it, water it, fertilise it, and you can either grow or die - 2 choices plant!' Pretty much goes for anything I plant here.
The leeks chose to 'grow'!
