They look really good Bedlam. I haven't used quorn products before are they vegetarian or vegan? I have used TVP as a substitute for mince and it was fine.

It manufactured from a "mushroom like"  substance but has egg white  in the products so not suitable for vegan. They taste ok and great for meat substitute for fussy vego DD.

Thanks Denise. Would be good to have in the freezer for a busy day or when you just can't be bothered. Maybe I'll have to have a cooking day to stock the freezer with vegan meals.  :)

I made soup. After the disastrous Noodle Soup I made Tomato and Red Pepper Soup which is/ was one of the recipes from the UK demo.
Always nice and very easy to make.I used a carton of tomato passata as I had run out of tinned tomatoes.

Pan grilled Salmon for lunch with salad a veggie fritters.  Followed by Coconut Sorbet.
CC like the look of the tomato soup.  Might make that for dinner. Thanks for the link.

Today I made a quick recipe from the "WW 2 day fast" book, called 'Pumpkin & corn quesadilla with fresh tomato salsa'.  Really enjoyed it.  :D

That looks really nice Julie, I know you love your wraps, what type do you use? There are so many out there these days I get confused standing in front of them trying to make up my mind  ;D

Judy, for normal salad wraps I use Mountain bread.  Used to use wholemeal but haven't seen that anywhere for a while, so have been using Rye.
For the quesadilla I used a tortilla (store bought).  :D

I had my everyday salad, tin of tuna and a slice of bread.
