Cookie, itís so difficult to be good all the time. Especially when you love to bake. My problem is that Iím getting different reports from different Doctors. My GP is at one end as extreme in controlling the diabetes and the diabetes nurse at the other end in saying I havenít got diabetes. The kidney specialist reduced the pills from 3 to 2 and made no difference to the tests. Iíve been eating things I shouldnít and itís making no difference.
If you can manage to stay off the medication, do.  Itís not the medication thatís the problem but how it interacts with other pills you are taking, even supplements.
Iím amazed at how you have managed for so long but it gets more difficult as you age.

I havenít stopped smiling since reading the latest craze in Melbourne for potato cakes at top restaurants. The family have been loving my potato cakes, dipped in SD batter, for ages. They are crunchy and crackly with soft potato centres. I steam the thin slices of potato first, let them cool and then dip in the batter. The batter is SD discard, mixed with a bit of extra flour and water, plus salt, pepper and carb soda. It is essential to have very hot oil so that the batter cooks quickly. I use Rice Bran oil. I tend to cook a lot and reheat in the AF.

Made the fried Rice Paper Rolls today.  Great fun to make. Bit of a trick in getting the rice paper just right but not too difficult.
I cut the cooked chicken into strips ,  grated carrot, cut water chestnuts into small batons, ( essential for crunch), cut a large lettuce leaf into strips, ( not good ) cut mushrooms into strips. Put too much filling in but didnít really matter.
Heated AF and heated baking tin with a little oil. Sprayed rolls with oil. They didnít brown but crackled like shrimp crackers, and STUCK TO TIN. therefore the broke up a bit. They tasted lovely and I dipped them in ABC sauce.
I will make them again but will shallow fry. They would reheat well in AF.

Crumbed chicken, roast potatoes, cauli & broccoli in a garlic sauce, roast truss tomatoes.

Didnít get to make rice paper rolls, tonight with Water cress soup.

Iím jammed out. Made16 jars yesterday. Biscuits today. Apple muffins and Almond crackle biscuits.  Another lot of Plum Vinegar soaking. Also water cress soup.

Mab, I was wondering how you were going with the fires. Stay safe. They are so unpredictable. Asked Dr if I could reduce my Diabetic pills to 1. He said yes , but a blood test in 6 weeks. I had better behave myself as Iím eating anything at the moment.

Judy, we are ok here. I overlook a wetland and the Council are diligent about keeping the grass mowed.
Cookie, I understand how much you are enjoying the A/C. That is a lot of hot days.
Thought I might make a jam and coconut slice.
I was talking to a lady who works in the local cup cake shop. They make 4000 cakes in a batch. Her job is to fill the tins with the mixture. They have recently mechanised the process. Previously she used a forcing bag.

K Atie, I understand completely about the fires. One of the reasons we left Mt Macedon was the fire season. Also I was on a school camp during Ash Wednesday fires. We were evacuated. It was the noise that was most frightening.
People keep dropping off fruit for preserves. Also luckily jars. Iím able to handle one lot a day. Iím making, jam, jelly, fruit vinegar, fruit paste. Tomatoes donít seem plentiful in Ballarat. I give back a jar or two to those who fift the fruit or jars.
While on the Cruise, they served a fruit jelly with the cheese, I thought I might try making some. It was set a bit more than jam/ jelly but not as dense as fruit paste.

Yesterday had appointment with Ear Nose and Throat Specialist because Iíve had a husky voice for about a year. No nasties. Itís an aging woman problem. He said that itís the reason that a lot of elderly women can no longer sing. For men itís different.

Final measurements taken today for blinds for garden room.

Cookie, Iím not complaining after reading how hot it has been for you. However yesterday was a shocker. There have been fires North of Ballarat started by lightning strikes and driven by the wind.
Too hot to cook yesterday but roasted a small Chook at 8.30 pm after the cool change.

More plums! These are nice eating plums and grown next door.
Back to Tai Chi. Certainly good to do a structured programme. Our class has been invited to appear on Q and A. Not my scene at all.
Finished cleaning large pieces of silver, now for the small stuff.

Smoked salmon and Asian salad. Going to be a shocker today. Hot then storm and I have a medical appointment in the middle of it.
