Title: Walnut, Apricot and Raisin bread

Walnut, Apricot and raisin bread.
This is really worth making if you want a fruit loaf.  The balance of fruit and nut is perfect.  The walnut oil is essential,  which probably means that a lot of bakers will not make this loaf.  I made a free form loaf,  which doesn't look great , but the crust is exceptional.  However ,  next time I make this loaf,  probably tomorrow,  I will bake it in a tin.  Just to see the difference.
Makes 1 large loaf.

500g bread flour
250g.  warm water
30g honey
40 mls of walnut oil
17g salt,  OR 1 teaspoon of salt if using bread mix,  (as I did)
3 teaspoons dried yeast
120g,  each of walnuts, dried apricots and raisins.

Place Apricots in TMX bowl and Turbo to chop into large pieces about the size of an almond  Add walnuts and press Turbo button for a short burst.
Set aside with raisins.
Into TMX bowl add flour,water , yeast, salt, honey and oil/
Knead for 4 mins.
Add fruit and nut mix and knead for 30 seconds.
Set aside in warm place to double.
Tip onto silmat and knead in by hand,  the fruit that has not been incorporated.
Roll into a sausage shape and place into a lined tin or form into a free form loaf on an oven tray.   Spray with water and allow to rise to near double again.
Slash top.
Bake at 200 0.  for 25/30 mins or until cooked.  Digital thermometer should read 200 0 F.
Cool on wire rack.  Try not to cut it until cool. ( I cut while still hot, delicious)

It does sound and look nice Chookie. Waiting now for your picture of one cooked in a tin. Another oil to add to my pantry, I've never had so many different oils in my life  ;D

Judy,  if you buy Walnut oil,  keep it in the fridge.  Buy the smallest bottle you can,  although I have another recipe for Walnut oil and it is nice in a salad.

Wonder, we ate 1/2 the loaf with very good butter and it was beautiful,  but with cheese would also be great.  I am just now making another loaf,  in the tin this time.   It is to take as a hostess gift for tomorrow lunch.

is walnut oil available in the supermarkets chookie? This sounds lovely ... especially for winter when I am really partial to fruit bread for breakfast  ;) ;)

faffa, walnut oil best found in health food shops.   we h ad this for dinner tonight,  toasted.  Lovely.   now my fav. Fruit bread and 1 slice seems to be enough.

I plkan to make this now or tomorrow. I decided I had to have walnut oil as I now have 2 recipes to use it in. I searched everywhere and eventually found it in Kitchen Warehouse Cannington. $15.99 I was thrilled as I imagine it will be lovely in this bread.

I made this today and it is the best ever fruit loaf I have ever tasted. It is full of fruit and the flavour is ..........just perfect. I can see all my walnut oil being used to make this.

made this last night Chookie and OMG YUM!!

I made it with spelt flour ... still getting used to working with spelt so not a perfect loaf ... but it will come, just like my bread is nothing like it used to be as well  :D

if the youngest DS likes it then I have no hope of it lasting more than a couple of days in this house. Promptly sliced and froze the rest of it today so I didn't eat it all in one day  :o :o

Just wondering if Macadamia oil could be used in place of the walnut oil?  I've never tried walnut oil but I'm guessing its 'essential' for it's flavour?
Maybe I'll just give it a go anyway with the Macadamia oil and report back :)

Although I love walnut oil,  Maca.oil  would be fine as Gert suggests. I bought some maca. oil in Batemans Bay recently and find the flavor not as strong as the walnut oil.  Have been using it in salads.  I have a beautiful recipe for walnut oil folded into bread.  Will make again , convert and post when i have a moment.

I've had to cut it up and freeze it so I don't keep going back for 'just one more little piece'!

It reminds me of the dutch fruit loaf my mum used to buy from somewhere that I loooved

Just found this recipe and going to make one for my mum this afternoon. I have a small bottle of walnut oil that came in a gift pack at Christmas. Hope it has a long shelf life as no use by date on the bottle.

Should be OK if un opened.  Keep in fridge after opening.  Hope your Mum enjoys the loaf. ;D

This was delicious and my mum loved it. Not much left for her to take home though as we all went back for more.  :D Will be making this one regularly. Great recipe and thank you  :)

I'm just about to make another loaf and I couldn't find the recipe. I've put it somewhere for safe keeping. :P :P So I'm about to put it on evernote again. I thought I might use dates instead of apricots this time.

Faffa, that happens to me all the time. I have a midnight mouse (aka dh) who snacks at midnight on nuts. Tends to eat the whole packet..no matter the size of the packet. I am constantly trying to find new hiding places.

Girls,  I think Haze nuts or Pecans would be OK.

It's really cold here today so is still on the second rising. The only difference I can see so far is that the dates have made the dough a bit brownish, as though it has spices in it. That doesn't worry me though. Will let you know how it tastes later.

It was wonderful and well worth the $20 and trip to two delis to eventually get the walnut oil.  I have one of those pans that makes eight mini loaves, I think I may try it in that next time.. I think I will freeze the rest before I eat any more, maybe a slice toasted in the morning...

We all loved the date version, in fact we tucked into it a little too much and didn't have much left for later. I think it is a little sweeter with the dates. I might try cranberries next time.
Cookie , will try the dates.  Would you replace thw apricots or raisins with the cranberries?

I have this rising at the moment... But only had one satchet of yeast left (2 teaspoon instead of 3) - so hopefully it rises... and only plain flour rather than bakers flour... Oops! Hope it works!

Hi Kulsha. I don't use the sachet yeast as I buy it by the kilo so I only used two tsp. it's quite a heavy bread and mine didn't rise much. Hope it turns out well for you. It is also yummy next day toasted.

Thanks greyhoundmum. The next lot of yeast I buy won't be satchets... And will try toast tomorrow too.

Well, the bread itself turned out well except the fruit nut mix didn't get evenly mixed through, it's kinda grouped into a clump. Maybe I need to add it earlier in the kneading process or maybe the plain flour made the dough harder to mix it through as I couldn't manage to knead it in. Definitely will give it another go soon as the flavour combination was still beautiful, thanks Chookie.

 I usually give mine a good knead by hand before I put it in the tin. It sort of needs it to spread the fruit and nuts.

Cookie is right as usual.  So much fruit needs to be kneaded in.
With this much fruit and nuts,  it really needs all the yeast to lift the dough,( like with Hot X buns).  Also much better with bread flour.

Kulsha,  yours does look good.

Thank you, I'm glad it didn't turn out that bad considering...it was the first time I used my new bread tin and just starting to venture into bread baking. I can't wait to try it again with bread flour and the extra teaspoon of yeast next time. 2 slices toasted this morning was a lovely breakfast, and filling too!

Made this for the first time today and it worked well thanks Chookie.  I made it in my new large, wide bread tin as my other tin was being used at the same time.  My loaf was therefore more wide than high so next time I will make sure I use the standard bread tin.

Judy,  these both look good.  With that large tin you need to cook a big loaf.  I have been thinking of putting 2 loaves in, with a piece of foil in between.

I haven't tried it,  but I think it would make 2 tall loaves.  Would you have difficulty cutting these?  Or you could make 1  1/2  mix.  This would be perfect. The tin is an odd size,  but such a beautiful tin to bake in.

I made another loaf of this today. We really love it. We slice it and freeze it. Today I used walnuts, craisins, golden sultanas, dried blueberries, dried cherries and some chopped dried paw paw.

Cookie,  I also sometimes add a pinch of spice mix.  I like this bread toasted for breakfast.

Cookie,  I keep a small container of the French Four spice mix,  ground in TMX.  I add a couple of pinches to lots of dishes.

Judy, any oil will work but Walnut has a lovely flavour.

Judy, the walnut oil is also lovely in white or grain bread.
Also make a nice salad dressing.
I have a delicious recipe for a small  loaf which uses walnut oil. I have only made it once as Ral and I ate the whole loaf for afternoon tea.  Maybe time to make it again. ,!

It must be wonderful then Chookie. My Walnut Oil gets tossed in here and there too. So much so that when I make your Fruit Loaf I always need to check that I have enough left.
