Title: Bread rolls ready in under 1 hour

Inspired by Ed and Lee's yummy crusty rolls

600 g flour
350 ml lukewarm water
2 tablespoons of olive oil
1 teaspoons salt
Yeast 2 ¼ tea
2 teaspoons of bread improver

Add all of the Ingredients to bowl and knead for 4 mins
Allow to rise for 10 minutes in TM bowl, knead for for 30 seconds

Roll into a log and cut into 8, shape into rolls. 
Place rolls on a tray and, score with a sharp knife.
Cover with a tea towel and Place rolls in a warm spot and allow too rise again for 10 minutes


In a small bowl or cup mix

2 tablespoon milk
1 tablespoon oil
1 tablespoons of rice flour


Brush rolls with oil/milk/rice flour  mix


Bake at 200C for 25 min then 5 min on the oven rack without the tray.

What did you change about the recipe Uni apart from the obvious of not cooking them until the oven had come to temperature?  They look great.

well done Uni.  These must be fairly large rolls, with this much flour and liquid.  Does the short  proofing mean that the have not risen as much as longer risen rolls. .?

if u want soft roll dont brush with the oil/milk/rice flour  mix

i added oil and bread inprover, keand for 4 mins and no egg in the oil/milk/rice flour  mix

Uni - DS says they were great!! Now will be a permanent addition . . . just have to learn a better "slashing" technique!  ;D ;D

These are beautiful, easy to make and yes, ready in about an hour. The result is a crispy crust and lovely soft middle. I changed nothing apart from adding another five mins to the cooking time because my oven runs a little below temperature. I proved them in the cold oven for the ten minutes then left them in there as the oven was heating up to 200. Is that right? Well it worked anyway!

Where do you buy bread improver? Is that the same as baking flour?

No, bread improver isn't baking flour Cowley. You should be able to buy bread improver at any supermarket. It will say bread improver on the box/packet ;)

Cowley... When I made these I didn't have the improver so simply left it out. Rolls were fine. I've never used it so really can't say what difference it would make... Uni or Chookie would be the ones to explain the difference as they're much more experienced with bread.

Bread improver replaces the gluten in the flour.  Plain flour is different to bread flour in that it does not have as much gluten.  It assists the yeast to rise when making bread.  Here is a roll that I made with this recipe.  I made 2 batches,  the first went to feed the fire fighters who have been very busy in our area,  the last couple of days.  They are not supposed to eat food from domestic kitchens,  but no one has time to drive to the shops for food. Tomorrow I ill make them Cinnamon scrolls from JulieO's recipe.

Chookie - thanks very much for the explanation of what the bread improver is used for.... Must admit I had no idea before - Those firefighter rolls look so good and I'll bet those exhausted men were extremely grateful to you.  Good for you!!!  Everything seems to have gone OTT and common sense has just given up in despair and gone home!!

I made into 3 logs, and cut into 6 once cooked, for meatball subs.

Adjusting the size to 12 rolls to make it kid friendly and leave out bread improver. For the brush subs rice flour to normal flour. Beautiful!

my winter method
pre heat oven at 75 F/F

add 300mls of water to bowl time 2.30mins, temp 50, speed  ^^
add  remaining ingredients  adding  the yeast  last
knead 4mins

trun oven off

shape and place in oven for 1/2 hour

Bake at 200C for 20 - 25 min and 5 min on the oven rack without the tray.

these rolls are 1/2 wholemeal and 1/2 plain white flour

My understanding - after you baked for 25 minutes, switch the oven off and leave it for 5 minutes in the oven.

I just took some of frozen bread from the other day and turn out beautiful for kids morning tea (sliced and toasted)

I have some of these on the first rise now Uni - it's been 10 minutes but the dough hasn't risen much at all.
Is that how is? I'm going to give it another 5 mins. It's nice and warm where I have the bowl.

Made these today, had one (still warm) for lunch with ham & salad. Love them, best crusty rolls I've ever made, thanks Uni! Will go perfectly with our soup tonight.

one rise works well 2, rest them for 1/2 hour in a warm oven. its getting cold in sydney

Uni, do you preheat the oven? I've just popped mine into a cold oven. I rose them for a lot longer, because I forgot about them. They look awesome, so far!

Oh my goodness! These are just lovely.
Mine proved for about 20 minutes in the car. They went into a cold oven.

The top is lovely and crusty and the inside has a soft and very fine texture. These would be the closest to a (good) bought bread roll I've ever made. Thanks uni!!

Thankyou for sharing, they look amazing and will definitely have a go... the only thing being that I will have to consider what to use for 'bread improver', as it's not something I'm much aware of being in the UK - although I do add vitamin c powder/ascorbic acid to my bread, to improve the rise. :)

Fantastic looking rolls, I'm giving these a go at the moment, hand kneading and going to cook them in the camp oven see if it works for when I'm bush camping, only concern is I will not know the temperature of the camp oven.

DD requested to make scroll. Half recipe without bread improver, roll it out into rectangle then spread cheesy mite and sprinkle grated cheese. Will report the result.

Uni, I turned your bread into pizza pockets with success.

I added 2 tsp. master foods pizza topper herbs, to the dough.
Then rolled out 8 balls, spread with pizza sauce, placed in a sprayed pie tin, then added the filling

folded over the edges securely, and flipped over  so seams were on bottom of tin, and brushed with garlic infused oil

baked for 30 mins @ 200c.
kids loved them   :)

Made these again yesterday & they were great (particularly as I didn't get distracted like last time & only put 1 tsp of yeast  :)). 

Just need to play around with the cooking time & temp for my oven.  Its relatively new, European so has no degrees on it just numbers 1, 2 etc & after my previous 1930's oven very hot.  That aside very easy to make & yummy.

These are simply the best rolls. I made them today and was determined to make them into the flat hamburger rolls. I only made 6 of them into rolls, flattening as much as possible (other two became Vegemite Scrolls). I then placed a silicone mat on top of the rolls on the tray and put the scrolls on the top tray to prove. The idea being that the rolls will prove sideways and not up.

It worked well, I'll post a photo later on. I ended up with rolls just like you can buy with the top and bottom nice and flat. So gorgeous and soft inside too!

It's such a quick, flexible bread...have used it a number of times now  :)
I used this dough for Parmesan bread, and much quicker way than my version.

Added 2tsp master foods pizza topper herbs in with dough
Rolled dough out to fit a lined tray, brushed top with garlic oil, and sprinkled with 100g Parmesan cheese & extra sprinkling pizza herbs.
Baked for 25 minutes.

4 with Uni's topping for lunch and 4 with Maddy's Parmesan & pizza herb topping to have with soup.

Uni, this bread was a huge success for making cheese & bacon rolls.
Went into DS school cooking class today, and we made 60 small rolls.
Took thermie in &  whipped up 3 batches.  Cut each batch into 20 smaller rolls, which once cooked were the size of Bakers Delight mini cheese & bacon.

I actually think I'll stick with this dough for them in future,  as it's a much quicker process  8)

I subbed out 300g bread flour with 300g wholemeal spelt and upped the water by 30g to make flat hamburger rolls. Fantastic! Still may need a little more water, but really tasty.

We made these for lunch today and had great success with them, so easy to make.  They were perfectly cooked on the inside and bottom, could have been a bit browner on top but didn't want burn the bottoms so pulled them out.  So more practice I think with our oven.

Tried this recipe a couple of times now and the results were reasonably good, well the rolls were eaten quickly :-)

My biggest problem is getting the dough out of the TM and cleaning it ?

I did end up with a rather dry dough at first try so added a small amount of extra water, but the result was a real sticky dough that took me forever to clean from the bowl ! maybe too much water ?

I suppose the question is, should the dough be dryer so it does not stick to everything or is there an easier way to get it out of the TM bowl ?

I remember from the demo we had that the lady just seemed to tip out the dough onto the pastry mat then run a few quick turbo blasts to clear the blades, but with my offering, no way Hose'.

GNH,  better to have a wet rather than dry dough when making bread.  I keep a bowl of flour on the bench and dip my hand in this and then scoop out any dough that has stuck,  then do the few seconds zap back on the machine.  More flour on  hands and scoop again.  Leave the dough on mat while you fill the bowl with cold water.  Leave to soak for however long it takes to make the rolls.  Have fun with this excellent recipe.

Another hint GNH is to turn the thermomix bowl upside down and wiggle the blades thing back and forth. This helps to drop the dough for you. Then turn it back up the right way and return it to the machine and do as Chookie suggested. Put the bowl on lock and blitz it a couple of times using turbo. The dough will be all round the edges and you can gather it up as Chookie said. Practise makes perfect.

Today's lunch with leek and potato soup.
Used vit c NOT bread improver. Also used fresh yeast, but couldn't weigh exactly. Have unpacked scales today at last.
Took more than an hour but  was still very quick and it is winter here.

Here is Droverjess latest awesome bread. Using this recipe.

I made this loaf today to great acclaim, but it took more than an hour to be sure of enough rise. It was still quick. I used 24 g fresh yeast, and 1/2 tsp of vit c powder. Rose till popped out of jug, then shaped and proofed until finger ready. Sprayed with water before baking. Baked 35 mins until 200 F on prob.
It was a prefect crunchy topped farmhouse loaf, so soft and bouncy. The family were amazed. Thanks Uni.

These are really lovely loaves but to get them really light and airy they need time. About 40 min first rise, and approx 30 to 40 second rise...  Finger test for baking. Spray with water not Uni's topping as quicker and easier and a loaf is gone so quickly here.

Have just taken a batch of these rolls out of the oven only to remember that I forgot to put in the oil.  They look fine so am keeping my fingers crossed.  Maybe I have done a bit too much today.  :)

Uni, thanks for a very adaptable recipe. Used 70g mix of sunflower seeds and pepitas and 70gs of oats and remainder of flour to make the 600g total, macadamia oil instead of olive and lemon juice instead of bread improver. I made 15 small bread rolls. It did take longer to cook - need to check the temperature of my oven.

Husband and visitors loved them  ;D

Made this again. I stick to the powdered vit C.
Used left over sour cream (72g) instead of the olive oil.
I forgot to say I usually use 370g water not 350g but with the sour cream I used a fraction under 400 g liquid inc the sour cream.

Made two loaves in smaller tins.
Aga has been turned down a fraction so they were cooked at a lower temp.

Yesterday I made it with 1/3 brown flour and I rounded tsp malt. I can't tell you what it was like as we gave it away.

Made two loaves, one plain and one with sundried tomatoes.

50g sundried tomatoes (not in oil) and 1 d of dried onion rehydrated in boiling water until cool. Done in a hurry.
Chopped and added to half the dough after first rise before shaping and proofing in tin.
Sprinkled nigella seeds on top.

I have just put a batch of these in the oven. I used the rice flour mix on half and just put Nigella seeds on the others. I can't wait to see how they taste. We have never had bread at Christmas lunch before. MIL likes it so I have made it for her and as it only takes an hour.

Agree, these are very good. I was checking through some recipes and we have certainly moved on a lot in baking bread. With the cold pot method you can also bake a loaf in under an hour. The pipe loaf takes only 45 minutes started in a cold oven.
The baking time for rolls in the air Fryer is 15 minutes, plus proving time. For me this is another 15 minutes plus 4 for kneading. . So 5 or 6 rolls in 34 minutes.
I have a feeling that you can probably have hot rolls for breakfast in even less time using an electric oven and a cast iron pot. Probably 35 minutes. This is allowing for 20 minutes for the oven to heat up. If oven heats up more quickly then this will reduce the time.
Must play around and see what if I can reduce the time more but still get a good result.

These rolls are still my favourite! I flatten them in the oven by placing a tray over the top to make them hamburger rolls.
