BEEF AND GUINNESS STEW.
1 brown onion, quartered
3 tablespoons plain flour
500g beef, diced
olive oil
2 sticks celery, chopped
1 carrot, peeled, chopped
200g Swiss brown mushrooms, chopped
420g tin of diced tomatoes
1 cup Guinness or stout beer
1 large tablespoon of vegie stock concentrate
2 bay leaves
Salt and pepper
mashed potato and chopped parsley, to serve
1. Place onion in bowl and chop on speed 7 for 5 seconds.
2. Add beef, flour and oil. Saute for 3 min, temp 100, reverse speed 1.
3. Add celery, carrot, mushrooms, tomatoes, beer, bay leaves and stock.
4. Cook for 60min, temp 100, reverse speed 1.
5. Season with salt and pepper and serve with mashed potato and chopped parsley.
TIPS
Carrot and celery can be chopped in TM before step 1 for 3 sec on speed 4-5. Set aside and add at step 3.
Tomato paste can be used instead of tinned tomatoes, add 100ml of water extra.
If using tender cuts of meat, cooking time can be reduced to 20 min. I use cheap cuts for this recipe which need longer cooking time to tenderise.
Potatoes and extra vegies can steamed in the Varoma while stew is cooking.

Thermomixer The leftover Guinness can be placed in an ice cube tray and frozen.
CP would be lovely as a pie.
Chelsea I made this yummy stew tonight with steamed dumplings in the varoma. I love dumplings although my DH and kids still prefer mash. I followed the buttermilk dumpling method from the budget busters booklet and then just had to tweak this recipe a little to suit.
Here are the changes I made to this recipe:
*I didn't wash the bowl after making the dumplings, but scraped it out quite well and used a little less flour in with the beef & oil.
*I added 100g water to the recipe (I put it in with the Guinness, stock etc).
*I cooked the stew for 25 minutes at 80 degrees, reverse speed 1.
*I then put the varoma in place (with dumplings inside) and cooked it for a further 25 minutes at varoma temp, reverse speed 1.
Farfallina after 40 minutes she added 10 chopped prunes.
Lucyluu added 250g kidney and made it into pies.

Sheree, this was yum!!! Lucky for us it made enough for 4 so we get to have it again in the next day or 2. What do you do with your leftover stout - I know, everyone will tell me to drink it but I was wondering how long it can be kept in the fridge as I would like to do this recipe again for a visitor in a couple of weeks time, no make that 1 week's time. I don't normally do recipes again that quickly but this one is a little beauty. Only change I made was to not blitz the onion so long (did 2 seconds on speed 5) and next time may add more meat and a little less mushroom just to satisfy my meat eating husband. He loved it though and I think there are more meat pieces in the leftovers than there were on our first serve so that will make him happy. Thanks for the posting - love these types of meals for winter.

Freeze it in an ice-cube tray and put blocks into a bag. You don't need the bubbles and it will keep that way.

Thanks Thermomixer. I did ask the lady in the wine shop whether I could do this and she didn't know. Another customer told me to drink it and went on to tell me she was given stout as a youngster as she was anaemic - seems strange giving alcohol to children.

Made this last night, and plates were mopped up with bread. Very easy then to just put them in the dishwasher. With a bit of puff pastry, the stew would also make nice pies .

I think anything would work well with this stew Sheree!!!! When I cooked it the other night my DH said it was SOOOO good that I should send you a smiley face. He doesn't quite understand the forum - just walks past occasionally and sees the emotive icons!!!

mmmm i made this tonight, it was so yummy my dh loved it and usually we have leftovers but not tonight!!
next time i make it i am going to put it into puff pastry and make little pies from it.

Thank you for this recipe. I have made it several times and it always works beautifully. Last time the meat I used was Ossobuco type (4 pieces of meat) and it was lovely. I think I want to buy the budget buster recipe booklet as I see many interesting recipes mentioned. But then I want to buy all the TM recipe books......

This is the first time I've used Guinness (or any kind of beer) to cook meat
I've chopped also my celery sticks and carrots with Thermomix as you noted
I've bought non-fat tender meat and cooked for 60 minutes. (It'd be OK even 15 minutes less but i went on cooking anyway)
I steamed potatoes. (It was better if i chopped them smaller cos it took a bit longer than usual to cook)
After 40 minutes passed, I also added 10 chopped prunes (dried plums) as I saw in a web page (http://startcooking.com/blog/361/Guinness-Stout-Beef-Stew) and continued to cook 20 more minutes

Absolutely delicious. I made this last night as my blood levels are dangerously low (again) so it was great to get a recipe that had guinness in it. Made a great change from eating black pudding and drinking guinness ;D. I remember my Irish mother making me drink guinness as a child too lol but as a child I found the taste so vile I doubt if I could ever drink enough of it to do me any harm... or any good either come to that lol.

I made this last night using Chelsea idea of 25 min on 80 degrees and 25 on varoma with dumplings and veg, turned out a winner, have some left overs to make into a small pie. :D

Delicious - thank you for posting riv mum. Made this for dinner used stout and added the prunes after 40 mins as suggested by farfallina and served with steamed baby jacket potatoes. The flavour was awesome - no thanks to the plastic that I discovered in the bottom of thermie - I used diced chuck steak from Woolworths and simply cut the plastic wrap an literally dropped the meat from the foam tray - including the pillow of whatever is on the base to absorb blood etc from the meat! Anyrate no after effects suffered by DH or me - will definitely include this on the make again list - minus the additives!!!! ;D ;D

yum made this for dinner last night with steamed dumplings (http://www.forumthermomix.com/index.php?topic=197.0). the stew was delicious and going on the menu plan (thanks cookie!) but i wasnt overly impressed with the dumplings, i only steamed them for 15 minutes but found them overcooked and hard.
wat recipe does everyone else use for dumplings?

I was told to drink stout while breast feeding many years ago. Never did get a taste for Guinness, but did grow to like some other varieties. Must give this one a go Next time the weather turns cool.

Just thought I would bump this for all our newbies out there. This is a very tasty dish for winter. I made it tonight but it was a bit soupy for our liking (we like thick stew). I think I will drain the tomatoes and reduce the stout to 170g next time. :)

I don't remember how I found this recipe initially but I've had it bookmarked for a while and finally made it tonight, it was delicious. We steamed potatoes t Varoma temp for the last 20 minutes and served it with those and it was the perfect stew consistency - thick and dark and rich. Definitely a keeper!

Don't try, as I did, to do double the recipe in thermomix. It is too much meat for the machine and even on reverse - started to just shred the meat. Ended up transferring the whole lot to slow cooker after the cooking meat part. Will post results.

Not a great success for me. I think mainly down to trying to do double the mixture. Just ended up with grey meat. As a result the end taste - after all day in slow cooker was a bit so so. Am hoping it will taste better on reheating after flavours developed a bit.

We had this last night and loved it, I would say the best casserole so far, never used beer before as I don't like it, but it really did make it super. Still have the left over beer in fridge wish I could keep it for the next time as I hate waste but no one likes Guinness. :D

Made this tonight. Chopped the carrot and celery in TM before cooking onion and meat. Then I chopped the mushrooms fairly fine to hide them as DW doesn't like mushrooms. Added the prunes as per Farfalina's suggestion.
It was a hit. We both really enjoyed it and I will make it again but I will hand cut the celery and carrot next time so that there are bigger pieces of vegetables. I had mine with bread but DW had hers with mash. I might try dumplings next time.

Made this the other night, DH really enjoyed it and said the meat was very tender.
I'm not a big red meat eater so I just had some of the stew gravy over my veggies (still get a little meat but not much) and it was delish.

We had this for dinner tonight and it was delicious. I normally do my casseroles in the slow cooker to get tender meat and delicious flavors and I was surprised how well it came out in the thermomix.

Just wondering, what does the consistency of the meat turn out like? I have made a couple of casseroles/stews and the meat always turns out like tuna. I noticed it wasn't as bad when using chuck steak though but it still wasn't the consistency i'd normally like.

Hi Stoked, I notice you have been busy looking at recipes tonight and as a new member I'd like to welcome you to our forum. Why not pop over to the home page and post in Introduce Yourself and tell us a bit about yourself so that our members can welcome you into the fold.
I use blade steak for casseroles but chuck is good too. I cut the pieces 4 to 5cm square, if it is too small it will certainly disintegrate. Try the butterfly method I mentioned on another thread as well as this helps keep the meat in shape.

Made this for dinner. Added 250 grams of kidney then when cooked made into pot pies. Brother here for dinner said it was the best steak and kidney he has had for a long time. ;D
