Title: Freezing

Awhile I read somewhere (can't recall where now) that a new topic was going to be started in regards to what ingredients you can freeze. Just wondering if this has been done as I can't find it anywhere.

I wanted to know if you can freeze sour cream.

I freeze everything, including my flour. (I live on Lihir island in PNG and if I don't freeze things I'll either get weevils or things go off very quickly!) if you do freeze flour and you are going to make dough just make sure it's at room temperature otherwise it doesn't rise, as I have recently found out!

That would have been annoying Lindsay. 36 years ago when we lived in Broome (well before it was developed) I had to keep everything in the fridge. If we left the electric kettle out over night the cockroaches would build themselves a little home in it. :-[

So cookie, with that cream u mentioned in another topic close to it's use by date, are u using it straight away or are u freezing it?

I've used it already. I made some into icecream and the rest into butter. I find it easier to do it straight away than freeze it. I then freeze the butter.

Kezza, I usually freeze my cream - I buy it on special when it's close to its use-by date, then throw it straight in the freezer. When I need another batch of butter, I pull it out and let it thaw in the fridge overnight. I've never had any success making whipped cream out of thawed cream though, but as butter it works fine.

jkmt, try whipping your cream then freezing it.  That works ;)

Gosh, I didn't think u could freeze whipped cream. I am a real 'freeze-o-phobe'!  I need to completely change my thinking of fresh is best ALL the time. Thx jkmt and JD. Bring on the freezing thread, I have a lot to learn. :o

That's amazing. Frozen whipped cream. I would have thought it would go watery
when defrosted.

I used to freeze leftovers this way years ago mcmich when I didn't used to eat anywhere near as much butter, sugar & cream as I do nowadays  :-))  These days I make sure I always have a fresh carton of cream in the fridge as one of my TMX recipes is bound to have it on the list of ingredients and if it goes out of date, I just turn it into butter.

Thanks, JD. I must try that. I had heard you could freeze whip cream. Hardly ever use it that way, so I'm just not that organised. However, I've had a coupe of occasions lately when I've made a batch of scones or something for social morning teas, and have wished that I had some fresh cream handy so that I could whip and take along. But no shop handy to get any.
