Title: Peppermint rounds

Mum made these every year for the festive season, she would bash the mints and biscuits with a hammer but the Thermomix makes light work of that step.  I've made 2 batches of these biscuits, the second batch was much better than the first so I have altered some details of the recipe.

Peppermint slices - makes approx 100 pieces depending on how thick your rolls are.

200 g pack of crown mints (the big round flat ones)
250 g packet of malt biscuits - Griffin's malt biscuits are the best, much darker than Arnotts and maltier too.
can of condensed milk - I used the skinny version
40 g coconut for rolling

Place the mints in the TM bowl and chop for 10 sec/speed 6. (cover your ears, this is very loud).

Add the biscuits and chop 6 sec/speed 6.

Remove mixture to a large bowl and add the condensed milk.  Fold through until all crumbs are incorporated.

Take a handful of the mixture and roll it into a sausage around 3 cm diameter then roll it into the coconut. The length and number of sausages is unimportant.

Wrap all the sausages in the baking paper and refrigerate for a few hours to firm up.  Cut each sausage into approximately 2 cm pieces, place into a sealed container and store them in the fridge.  They will last indefinitely, just bring out as many pieces you need at a time or parcel them up in cellophane as gifts.

It's OK to leave these out of the fridge in a sealed container for a few days if you are making Christmas hampers.

You can also see the little chips of peppermint in the second picture due to less time and speed when chopping.

Never heard of these JD, I thought this was going to be a recipe with biscuit, peppermint cream, then chocolate. Will have to give them a go  :-*

Well I am surprised none of you have ever heard of this recipe.  I just checked Mum's recipe and they're called rounds not slices so have changed the heading on the recipe as it does describe them more clearly.

Since Arnotts changed their recipe for malt biscuits I have been using chocolate ripple biscuits - just as good!!!

Judy, if you were giving these as part of a hamper, etc., how long would they last out of the fridge?  They do sound lovely!

I would make them and keep them in the fridge until the night before you're giving the hamper GF. Sometimes I buy small plastic containers for some of my hamper items so if you leave an opening in the cellophane you can just slide it into the basket when you're ready to give it.

I'll take some out when I get home and store them in a container so that I can see how they cope with being out of the fridge, they might be OK.  It's just that we have always stored them in the fridge. Will report back after a few days.

Judy do you mean those big hard white mints that you just have to suck or else get a broken tooth. I love the taste of them. At first I thought wow this is an idea to use up a packet of after dinner mints I was given but then re thought. Recipe sounds good though and I have not heard of it before.

Yes, they're the ones troupie.  Mum used to remove them from the packet for a few days to soften them prior to bashing them with a hammer but the TMX makes short work of it, albeit it very loudly.

GF, 2 days out of the fridge and sitting on the bench in a sealed plastic container - softer than refrigerated ones but quite OK.  6 hot days on their way so that will be a good test.  Will report again after the weekend.

GF, 5 days out of the fridge and still firm so I'd say you can make them a good week in advance for baskets.  I would advise the recipient to keep them in the fridge once they receive them though as they will last indefinitely in there.

I made a batch of these yesterday.  Have just sliced them up and nibbled on the off cuts from the ends.  Yuuuummmm :)

I have just made another batch of these using a different biscuit and different chopping times/speed. These are the biscuits which make a great improvement to the recipe.

What do the mints look like or the UK equivalent please?
What else can you roll them in, coconut is not popular... ?

Judy,
That's a winner in our house. Couldn't see the griffin bickies so used  Arnotts. DH loved the 4 he taste tested!
Hidden in the back of the fridge now.
I bought extra strong peppermints not sure what crown taste like?

I used the generic extra strong mints for the first lot then Pascall brand mints for the second batch Denise. Muchy muchy in taste.  Glad DH liked them, don't be surprised if you find him scouring the fridge for some more though LOL.

I haven't been on for ages and then saw this recipe and am so glad I found it. They were really easy to make and are seriously yummy.  I can't believe that so few ingredients can taste so good. I used generic mints and Arnotts as I couldn't find the griffin. Thanks for the recipe Judy.
