I cooked on the first day of lockdown but since then I’ve been living out of the freezer. Nice to see what everyone else is cooking.

Vege macaroni and cheese, roasted veges, Mediterranean vege bake and vege stew.  Some neighbours have been dropping heavy hints about how much they loved last week's cookies, but I didn't have time to make any more ... they will just have to wait.

DS was put in charge of smiley pancakes for breakfast by DD ! Funny how I had to take over finishing off cooking the last of the batter ,as both ran in opposite directions to do on line uni and school ! DS made a huge mix , so I left 🙃 on kitchen table , all consumed during the day . DD made a smoothie berries mango frozen and fresh bananas.

Yesterday I made a no added sugar marmalade. It is very nice. Based on recipes for using Chai seeds as a thickener. It has very few Cals and Carbs.

I’ve taken a screen shot of your diabetic lemon marmalade recipe and put it in Special Diets Chookie.  Great recipe.
