Malt loaf with yeast

This was in the weekend papers.

Easy to convert, going to try this week.

I am already soaking 225 gms of vine fruits in tea overnight before making this tomorrow. I think soaked fruit gives a better result.
I am also going to rise it twice (in bowl and in tin) and haven't decided whether to add fruit before or after first rise. However I shall add the fruit by hand as I think  *: might mush it.
What do the experts think?

In Chookie's Hot Cross Bun recipe she add the fruit after an initial kneading of 2 minutes then kneads again. ;)

I think it is best to add it by hand. It gets scrunched up in the tmx even on reverse. It loves to pop out as you do it but I shove it back in. I like the idea of soaking the fruit. I will copy you. ( I'm no expert though :))

Making this has been a saga..... But I have two squishy looking loaves cooling and can't wait to try them.



I measured the water and 25 g fresh yeast and in the middle of measuring the flour in the  *: my scales conked out ( not Thermy ones) so I had to entirely guess the flour and go by feel of the dough!!!

 :: the flour and water for 2 mins, paused 15 mins then added the melted butter, sugar, salt  6 g, malt and treacle, done in microwave, not  *:. What a sticky mess!
 :: 3 mins.
Then I put on a mat and kneaded in by hand the drained fruits. Even stickier.

I did a 35 min rise in a bowl to ensure all rising well, then on a mat divided in 2 and using bread scrapers gathered up the dough and plopped into the two buttered tins. It was really hard to handle, and of course my bread may not have had correct flour as I guessed it.

I then proved in the tins for about 1.5 hrs, the recipe said two but it had reached above the tin edges in this time and felt right.

It is sensationally good to eat, I am very chuffed.

Slice and eat with or w/o butter.

Might try toasting if any left but imagine will burn easy with so much malt and treacle in it.
