This looks lovely. Will give it a try soon.
-
Thanks DJ . This looks Oh so good. Will make.
-
I can just imagine the rich taste of this DJ. I will be trying it very soon.
-
I am already soaking 225 gms of vine fruits in tea overnight before making this tomorrow. I think soaked fruit gives a better result.
I am also going to rise it twice (in bowl and in tin) and haven't decided whether to add fruit before or after first rise. However I shall add the fruit by hand as I think *: might mush it.
What do the experts think?
-
In Chookie's Hot Cross Bun (http://www.forumthermomix.com/index.php?topic=8744.0) recipe she add the fruit after an initial kneading of 2 minutes then kneads again. ;)
-
Thanks CC, good idea.
-
I think it is best to add it by hand. It gets scrunched up in the tmx even on reverse. It loves to pop out as you do it but I shove it back in. I like the idea of soaking the fruit. I will copy you. ( I'm no expert though :))

I like the thought we are doing this together on different sides of the world. LOL? ;D
Fruit nice and plumped up this morning and good to go a bit later.

Making this has been a saga..... But I have two squishy looking loaves cooling and can't wait to try them.

I measured the water and 25 g fresh yeast and in the middle of measuring the flour in the *: my scales conked out ( not Thermy ones) so I had to entirely guess the flour and go by feel of the dough!!!
:: the flour and water for 2 mins, paused 15 mins then added the melted butter, sugar, salt 6 g, malt and treacle, done in microwave, not *:. What a sticky mess!
:: 3 mins.
Then I put on a mat and kneaded in by hand the drained fruits. Even stickier.
I did a 35 min rise in a bowl to ensure all rising well, then on a mat divided in 2 and using bread scrapers gathered up the dough and plopped into the two buttered tins. It was really hard to handle, and of course my bread may not have had correct flour as I guessed it.
I then proved in the tins for about 1.5 hrs, the recipe said two but it had reached above the tin edges in this time and felt right.
It is sensationally good to eat, I am very chuffed.

Wow that looks seriously good DJ ;D
-
Thx CC it is even darker than the pic shows and has great flavour.
-
It does look lovely DJ - do you toast it or just slice & eat?
-
Slice and eat with or w/o butter.
Might try toasting if any left but imagine will burn easy with so much malt and treacle in it.
-
DJ that looks so nice, I can almost smell it.
I plan to make it over the weekend all being well.
-
Oh cookie you must, it is soooooo delicious.
I just watched the programme on iplayer and I must say my loaves are much taller than those shown! I am well chuffed but did use *: and did and extra rise. DH is also very impressed. Now if I Can do the seeded one as well....
There will be 5 more programmes and they are interesting. I want to try the beer crust on a rustic loaf.
malt loaf bread and butter pudding will be fab too.
I await your baking news with a big grin on my face as you will love it.
-
I have just started this. At the moment I have the sugar, treacle, malt and butter melting in the *: I am using a slightly different conversion to you DJ as you said it was very sticky. Hopefully it will be as nice as yours.
The dough is sure sticky. When the butter etc was cool I added all the other ingredients and kneaded it for 4 minutes. I should have added the fruit in the last minute or so as it has broken up quite a lot. Ill put it in the tins in a bit and then let it rise and cook it. I can't wait to try it. Thanks for the recipe DJ.
I even remembered that the UK tablespoon is only 15 ml whereas ours is 20 ml.
-
I still have one in freezer then will do again.
It's a two bread scraper job, well it was for me!
And my loaves looked far better than on the TV programme.
I am sure you will love it. Happy Easter
-
DJ it has a lovely taste. Mine darkened a lot but that is because of the sweetness in it. Even before we cut it I could smell it. I cooked it as one loaf and added dried blueberries and cranberries to the few sultanas I had.

Looks great.
So glad you tried it.
-
I didn't put a glaze on it either as I knew I would be freezing some and it tends to stick with glaze. I love a slice with my cuppa DJ. Thanks :-* :-*
-
I put the honey top and yikes it was sticky.
Froze one loaf whole.
I see up have an electric knife for slicing, do you do all your bread that way?
-
Yes DJ we find that the best and easiest. DH likes to take charge of that part. For some reason he seems to think I will chop my finger off.
-
LOL !!!!!!
