Name of Recipe: Thai Chilli Chicken and Basil
Number of People:Serves 4
Ingredients:
600g chicken breasts or thighs (I prefer thighs)
1 onion, peeled and quartered
1 red chilli, deseeded and roughly chopped (I used sambal olek 1tspn)
1-1/2 tblsp oil
1 tblsp fish sauce
1tblsp sweet chilli sauce
1tblsp kecap manis (sweet soy sauce)
1 bunch shredded fresh basil, approx 1 cup
3-4 stalks fresh coriander, leaves and stalks chopped
200g coconut milk or coconut cream (adjusted down after the following comments - original recipe uses 400g which is far too much)
fresh coriander leaves and l red chilli, sliced - for garnish
Preparation:
Cut chicken in half or thirds lengthways, then slice across into thin slices.
Place onion and deseeded chilli into TM bowl and chop for 5 seconds on speed 7
Add oil and saute for 5 minutes at 100°C on speed 1.
Add fish sauce, sweet chilli sauce, kecap manis, basil and coriander and cook for 1 minute at Varoma temperature on Reverse + speed 1
Insert Butterfly. Add sliced chicken breasts and coconut milk and cook for 10 minutes at 100°C on Reverse + soft speed until chicken is tender and cooked through. (I thicken at this stage with some cornflour mixed with a little water and cook a further minute as above). If using thighs, cook 30 mins speed 90o
Serve with rice and garnish with coriander leaves and sliced chilli. (I serve it with bron's steamed garlic rice)
Please note different time for cooking thighs to that for breasts.
Modifications by forum members.
Thermomixer cut the coconut milk/cream down by half and cook on 90 degrees, and the sauce doesn't need thickening.
Judydawn did as Thermomixer suggested but still needed to thicken with 2 tablespoons cornflour in a little water.
Terese added sliced green beans and unsalted cashews about halfway through for more texture.
Helsbels added garlic paste and umami to give it a hit.

Can I use low fat natural yogurt or lite sour cream instead of the coconut milk?
-
You must be on a diet Karonjulie! When I was dieting (as I should be now) I used to substitute Carnation Milk's low fat coconut milk for the real thing. It works pretty well but sometimes, on different dishes, it used to curdle but still tasted OK. It is certainly worth a try though. I only did 1/2 quantity tonight so perhaps you could do this to see how it goes. Let us know.
-
We have to try and keep our fat intake down too JD and KJ so I always use the Carnation low fat coconut milk. As you say it may curdle but the taste is fine. Thanks for the recipe-will have to try it.
-

LOL !! what is it with the need to diet - I think that there must be some genetic problem that I can look at a recipe, my mouth starts to water, I put on another kilo and think "I should go on a diet"
This recipe is great, but I think that you can cut down the coconut milk/cream by half (freeze the remaining half of the can for next time) and I cook it on 90°C and the sauce doesn't need thickening.

Thanks for those extra hints Thermomixer, we're having it tonight.
I quite agree with the putting on weight. Everytime I walk down the chocolate aisle at the supermarket I think I put on a Kg.
DH has to keep an eye on his cholesterol, his 60 year old brother had several heart attacks and strokes last year so that was a really good warning. Fortunately he came through it all well. Scarey..........I'll be that big 0 in a few weeks. At least I'll get presents.
-
Thanks for those extra hints Thermomixer, we're having it tonight.
Let us all now if you do try the changes and what you think - everybody has slightly different tastes/ideas of how dishes should look.
.....I'll be that big 0 in a few weeks. At least I'll get presents.
Always look on the bright side !!!

Actually I am quite excited about turning 60. Age has never really mattered to me very much. I will get a seniors card at 60 and I can't wait to use it at our local greengrocer. He has 5% off on Tuesday for seniors card holders and has lovely stuff. So wow, I will pay 5% less. I can even go to the movies for $8.50-yeah.
I made the Thai Chilli chicken and have posted my comments in "What are you cooking"
-
i made this last week and it was fantastic. Added it to my 'would make again' list ;D ;D ;D ;D
-
I made this for the second time today and used chicken thighs instead of breasts. Took Thermomixer's advice and used less coconut milk (a 270g tin) and cooked the thighs for 30 minutes on temperature 90o. Found I still needed to thicken the juices though - 2 Tbspns cornflour mixed in a little water. Used 2 tspns sambal oelek this time - getting a little more adventurous these days with the taste of chilli.
-
I cooked this recipe and was surprised how lovely it turned out. The sauce was absolutely beautiful!!! Thank you for posting this recipe. Will do it again soon but have followed the "concept" of the ketjap manis, fish sauce and sweet chilli sauce several times now and it always turns out wonderfull!
-
Made this tonight and it was divine
My chicken wasn't cooked after 10 mins so cooked it for an additional 5.
-
Made this tonight, and OMG, DELICIOUS! My husband groaned in delight and declared it "restaurant quality". Guess we'll make it again :)
-
I am currently staying with my mother in law while our house is being built..
I cooked this meal, along with the garlic rice......
IT WAS DELICIOUS!! :-*
DH, and MIL, and 10 yr old son, were groaning with delight, it has been added into my TM recipe book!!
Looking forward to trying more recipes, and hopefully adding some of my own in the near future! ;D
-
Glad everyone is enjoying Nico's recipe - it is one of my favourites and I haven't found anyone yet who doesn't like it. I even had a friend who took the recipe home to cook on the stove top.
-
Sounds right up my alley Judy, will put in my To Do list for sure. :)
-
I made this recipe for the first time tonight and was really impressed. I used chicken breast and cooked for about 13 minutes. I like my curry type dishes quite spicy so I added two whole long red chillies and did not deseed them and I loved the extra heat. I also added some sliced green beans and a handful of unsalted cashew nuts about half way through to get some more texture. I also added a small slurry of cornflour mixed with water to thicken it up. This was really delicious and I would definately make it again, hubby loved it too.
-
I don't know anyone that hasn't enjoyed this one Terese - it is one of my favourites.
-
I have made this a couple of times now delish enjoyed by all (I used thighs)
-
Hi All,
I Made this for the first time last night and it was AMAZING!!! Highly recommend, and we shall be making this one again and again and AGAIN!
Thanks so much for sharing it!
Trish
-
ooh thanks for the bump haven't seen this one. Will try it but with yoghurt as I don't do coconut.
-
This is a fantastic one. We make it very often and it's always a hit with guests!
-
This is so yummy, not to spicey but has just the right bite to it, fussy ds even like it and had the left overs for lunch, I used chicken tenderloins cut in thirds and cooked extra 5 minutes more, another dish that will be made again :D
-
I made this over the holidays, using chicken thighs and adding cornflour mix at the end. Absolutely delicious and easy enough to be a week day meal. I have the booklet but hadn't got around to trying it yet, but all these positive reviews have encouraged me to do so. Thanks!!
-
Glad you enjoyed it Lellyj. It's so easy yet special enough to serve up to visitors too.
-
We made this tonight and it is pretty good as a weekday meal as it is quite quick to make. Next time, we will leave the seeds in as we found it lacked the heat we are used to.
Hubby usually makes thai green chicken curry which is more involved and time consuming, making the paste from scratch and really giving an authentic taste. Although it is not as good as that, it is a lot faster and quite tasty. Might experiment at some stage with adding extra ingredients to give it a more authentic taste in the TMX.
-
No photo's :(
I love to see photo's :)
Sounds nice. Will print it out, only thing I don't have is the fish sauce (can this be left out or substituted?)
-
Dede - your wish is my command!! (I usually always take photos but forgot to upload them)
Here is one on its own and then with rice:

OMG Tasty your a genie ;D
Thanks heaps.
-
Do I get three wishes?
-
I made this the other night, but it didn't really float my boat :-\
I thought it looked pretty ugly, especially using chicken thighs....so I didn't bother with a pic.
-
I made this dish a few nights ago and my DH loved it. I tweaked the recipe a little...used three whole chillies with seeds intact (we like spicy foods), replaced basil with Thai Basil, added a bit of mint because I had some, also added the cornflour at the end of cooking as suggested by Judy to thicken the sauce. A very aromatic/fragrant dish. Definitely a restaurant quality dish and will definitely be making it again.
-
Wow, 3 chillies & seeds - you do like spicy food. That would blow my head off ;D Glad you liked it though.
-
Yes Judy, we do like our food with flavour. They were the large red chillies though, not birds eye ones so not as hot. Great recipe so thanks very much for posting.
-
I made this tonight with a couple tweaks for TC.
Really a combination of ingredients from here and method from the
Chicken and Cashews with Coconut Satay Sauce and Coconut Rice (with photo)http://www.forumthermomix.com/index.php?topic=5335.0 (http://www.forumthermomix.com/index.php?topic=5335.0)
I steamed the chicken with some veg with some sweet chili sauce and Kecap Manis poured over. (because TC doesn't have the reverse function)
Cooked rice in the basket and the sauce in the jug.
Left out the coriander cos we both hate it.
It was heavenly..

I made the other night and the kids and DH all wanted seconds, definitely a hit. I thought it was slightly too sweet, probably why the kids loved it! I steamed some veggies on the stove whilst it cooked and didn't need to thicken the sauce, just stirred it all together at the end. This will be a regular request I am sure.
-
Made this tonight, followed the recipe exactly but just added some Caramelised Garlic and Umami pastes for a little bit of extra flavour - it was deemed a hit. Half a chili gave some nice flavour without blowing your head off, just right!
-
yum JD and vey easy to make. Thanks for the recipe, DH said it was restaurant quality :) I added two chillis as he likes a bit of heat.
-
Wow, it's been ages since I've posted but thought I'd pop on and say that this dish was a huge hit with my family - so easy to make and light enough to serve as a summer curry. I accidentally added the cornflour paste with the rest of the coconut milk and the consistency was lovely.........although.......
I made it the following day to take to a party and doubled the sauce in the TM and then transferred to a pot when adding the chicken. This time I thought I should add the cornflour at the end however the sauce curdled and ended up looking very unappetising. I obviously didn't cook it at a low enough temperature but was curious to know whether this would have happened in the TM (without the cornflour).
If i was serving it to my clan I wouldn't have fretted however serving it to others caused me to think hard...... ??? :-))
TM to the rescue again!!!!! Seived out all the chicken and most of the herbs and blitzed the sauce on 9 for 1 min and PRESTO, lovely smooth sauce.
This is on my list of favourites and I think I might add the cornflour mix with the rest of the coconut milk in future ;D ;D
Thanks for a lovely recipe!!!!
-
Glad it worked out for you Tan, good thinking re blitzing the sauce. NIce to see this recipe is still getting good reviews.
-
Cooking this for dinner tonight, it is one of my favorites!
-
This is one scrum-diddly-umptious meal.
Such gorgeous flavors, nice quick and easy.
Thanks to both Judy and Nico
I only used 2/3 of a chilli, but happy to report my 6 yo ate the chicken whilst not drenched in sauce it was still spicy enough that she took a sip of water after each mouthful LOL!
-
She obviously enjoyed it though to keep eating it Suzie - I love seeing kids eat great tasting food like this recipe.
-
I don't think I've made this, must try it.
-
I agree Judy.
Megan-Jane you will not regret it.
I have left overs for lunch today and can't wait!
-
I need to try this. Thanks.
-
Made this again tonight. Did I mention how amazing it is?
I cut chilli back to 1/3 and both little people devoured it no problems - I might try and sneak it up meal by meal!
Used thighs again...delish
-
I love it too Suzie but haven't made it for ages.
-
This was my choice for my first Thermomix meal cooked by myself (without my consultant). It was a great choice! It was easy and delicious. I really impressed my husband! I made the garlic rice from this forum to go with it and kept it warm in the thermoserver while the chicken cooked. I threw a handful of roasted cashews on top of each serve. Yum! :)
-
Great choice annaussie, I've never met anyone who doesn't like this one.
-
That's an impressive start. Well done :D
-
Bumping ;D
-
Forgot that it was here. His recipes are very easy and delis, and he has a TM booklet available through consultants and 2 books avail for sale from his website at urban provider
-
Yum! (http://img.tapatalk.com/d/14/01/12/ajataneg.jpg)
-
Husband had two serves. Kids at grandparents. Enough leftovers for three pies :) looking forward to lunch this week.
-
Must make this today for dinner.
I think it will be a great dish for a really hot day.
Will let you know how it goes.
-
right that's it....I'm so making this tonight!! We've had stinking hot weather all week here in Adelaide and I'm over salads n toasted sanwiches. I'm on my own at the mo, hubby does FIFO. I read someone made pies out of the leftovers, great idea! Love reading the reviews : )
Thanks for the recipe :D
-
Pies were delicious! Hubby heated one up for me this week and brought it to me at work.
-
We had this twice last week in all the heat.
It is so easy to prepare and cook and is good to eat.
I think it will become a regular dish especially when it is hot.
-
Finally made this and am now kicking myself for not making it earlier. It really is tasty and easy. As someone said earlier, it's a great summer curry. Next time I think I will steam some veggies to add to the sauce, whilst I cook the rice. If you are not sure if you should try this, don't hesitate, it's delicious.

-
This is on my gunna list. It looks delicious and I have plenty of basil n the garden.
-
I seem to be making this once or twice a week in the hot weather.
It is so easy and tasty.
Thanks for the recipe.
-
Cooking right now. This was one of the first things I made in my thermo over 6 yrs ago and is still a fav
-
Made this for dinner tonight. 22 month old DD inhaled a huge bowl and then asked for more! I actually cooked some macaroni and powered some sauce and chicken over it.
Used 1 small birds eye de seeded and after taking some out for DD, I added 3 more in the thermoserver. Was really yum! I didn't thicken it as we like lots of sauce. Next time I think I will double the sweet chili, fish oil and Kicap manis to balance the more saucy dish. But DH and I both had seconds too!
-
This regularly features on our meal plan :)
-
I made this last night and we really enjoyed it. I have not used my TM a lot and am just getting back into it. Can someone tell me if I can cook rice in the basket while the chicken is cooking and after a bit of time, add the Varoma dish with some sugar snap peas to the top so it would be a complete meal? I did cook those items separately but wondered if I could do them all at the same time. Thank you!
-
Glad you enjoyed it Elsie but sorry, it isn't an all in one meal. Firstly, there wouldn't be room in the bowl to add the steaming basket of rice and secondly, rice is cooked at varoma temperature. At a pInch you may be able to put something like sugar snap peas in the varoma whilst the chicken is cooking, they may cook at 100 but generally you need to cook anything in the varoma on varoma temperature.
I would cook the chicken first, it's even better done the day before or earlier that morning so that the flavour has a chance to really come through.
We do have an all in one meals section on the home page which you may like to check out.
-
Thank you, Judy. We liked this dish so much we are having it again tonight. I will try the peas just to see what happens and will do the rice as I always do it - in the microwave. I have looked at the all in one meals section but there is so much information on this forum that I still have a lot of looking to do!
-
This is still a firm favourite for us.
I've taken to adding some frozen Chinese vegetables towards the end to bulk it up.
I do rice in microwave to serve.
-
We had it the other night. I made it early and put it in the thermoserver and then cooked the rice in the thermomix.
-
I finally got around to making this for dinner tonight. I added 250ml of coconut milk and used chicken thighs. I didn't add the basil and coriander until the 10 mins had passed at which point I topped up the jug with veggies and cooked for another 10 minutes. We all enjoyed it, but it was a little spicy for DS, so next time I'd omit the chili at the beginning and add it at the table for the adults. DH also asked for more sauce, so next time I'd also increase the coconut milk to 300ml. I served it with rice and a sprinkling of roasted cashews.
-
We had this for dinner tonight, thought I woulld bump it as it is quick and very tasty.
-
I have to agree with that Bedlam.
