Title: Airfried Peri Peri Chicken

The chicken was quite tasty, and my boys gave it thumbs up. Give it a go :)

1 chicken, skin removed and cut into 8 pcs then make 2-3 slits on each piece

Sauce:

2 to 6 birds-eye red chillies
1 big red capsicum
1 lemon, cut into quarters
2 tbsp paprika powder
2 tsp salt
1 tbsp oregano
2 tsp red chilli powder
1/2 cup oil
5 cloves of garlic
2 tbsp vinegar
1 tsp black pepper

1 . Blend ingredients for sauce. Speed 8-10, 10 secs. Repeat till fine.
2 . Add sauce to chicken pieces. Marinade overnight.
3 . Spray airfryer basket with oil. Add chicken pieces into drawer. Start at 200C for approx 8 mins. Flip, baste with marinade sauce. Lower temp to 160C, 4 mins. Flip, if necessary. Continue at 160C or higher, for another 4 mins.

Tips:
I cooked in 2 batches to ensure that the pieces were laid in a layer, rather than overlapping.
Breast was quite dry, and required a shorter cooking time. I just removed those pieces first, and continued with the rest.

If you use chicken wings, 1/3 of the marinade is sufficient. Freeze the rest. Air fry nibbles (middle section of wings) at 200° 12 mins, flip midway.
Drummets. 200° 6 mins, flip then 160° 10 mins. 180° 5 mins. I would add 2 more mins 200° if they are not brown enough.

Yum! Am seriously considering Air fryer. Is it ok to use cooking spray on non stick basket?

Yes, no problem. The base is normal metal. Not coated with non-stick.

Made this again for dinner. This time with a longer marinade time - 3 days in the freezer. And it came out even better! The whole family said it was like Nando's

This is the AF now. DH has just cooked a batch of his special chilli chicken wings. Boy did it smoke. Not quite enough to set the alarm off though. I reduced the amount of chilli in the chicken. It will be interesting to see how it goes.

I did Uni!

Sorry I forgot to come back on. We all loved it. Next time I will add a bit more chilli as I didn't make it hot enough. I would usually only serve it with rice but last night I had some almost dead vegetables in the fridge, so they got used up too. I'll definitely make it again.

The veggies were done for 20-25 minutes I think BZB. Except the corn it was about 15 minutes.

I used one thigh for DH which I cooked a little longer and DD and I had a breast that I had cut into 3 pieces so that it wasn't so thick.

No BZB I haven't tried corn yet. I will have to do so.

Thanks for the comment re the plate CC. It is our everyday set. I bought it over 33 years ago. (Before children). I am wishing for some more to break so that I can use some of the other sets for everyday use.  :-X

Marinated 12 pieces of wings with a third of the marinade. Kept the rest of the marinade in the freezer.

Air fried drummets at 200c 6 mins,

Nibbles. 200° 12 mins, flipped midway
Drummets. 200° 6 mins, flipped then 160° 10 mins. 180° 5 mins. I would add 2 more mins 200° if they are not brown enough
