Been working and visiting dad alot lately so not much cooking in TMX  :'(

Tonight I am cooking http://www.forumthermomix.com/index.php?topic=7490.0 Chicken Casserole with mustard and tarragon. Will serve on top of mashed potatoes and some steamed veges on the side.

Mum gave me some over ripe bananas today so tomorrow I will make DS some banana bread.

how long did you cook the chicken for maddy to keep it so moist?

The chicken was marinated in olive oil, crushed garlic and lemon thyme, wrapped each breast in 3 slices of prosciutto, then each breast was wrapped tightly in glad wrap wrap and sat in the fridge for several hours.
Pan fried each side in olive oil - 3 minutes per side, then cooked in the oven for 10-12 minutes on 190c.  Cover with foil and rest 5-10 minutes.



Tonight we're out to Mexican for hubby's birthday.

Today I made the Chicken Tagine with Couscous & Harissa from In the Mix.  The meal was quite flavoursome, lots of sauce so have been able to freeze for DH to take to work.  :)

Harissa paste (have already placed in icecube trays and popped into the freezer.

I plan to do salmon in balsamic glaze with garlic quinoa and kale tonight. If  have the time and energy I'll do a second veggie.  I'm looking forward to trying the glaze, it sounds lovely.
As my picture shows, I've suddenly become younger :-)  DD was of the opinion that her picture should be here, not mine!

I'm on holidays in the caravan, so no Thermie. On my own tonight as DH is home spraying all the weeds that have popped up due to the summer rain we've had. So tonight I'll be making myself Egg Fried Rice.
A great cook is one who can rustle up a fabulous family meal with some freezer burnt chops, wilted carrots, sprouting potatoes and cabbage that's gone brown on the cut edges.

Hi Maddy,

No wasn't overly hot at all as I used the long thin chillies instead of the Birdeye ones stated in the recipe (wasn't going to go there!).  I did remove the seeds from half of them too but I could quite easily have left more in as it was quite mild with only a slight bite. The roasted capsicums gave it a nice flavour too. 

Once I've used it up I will make the recipe from HO that Faffa kindly typed up for me and compare the two.  :)

DH cooked honey and soy Chicken with lots of substitutes, but it still tasted great. We did find it sweet and only had 20 mls honey, so pleased that the honey ran out.  We tried the hint of using the thermoserver to soak the gf pasta. Unfortunately forgot about the 15 mins cooking time and it turned into a gluey mess. Next time we won't forget!

I've been hankering for roast pork all week, so today was the day.  Made the apple sauce in the TM.  The tip about swirling the apples in lightly salted water really did stop the sauce from turning brown.  :)

Perfect crackling Julie, it was the first thing I looked at.  A roast, you do tend to hang out for one during hot weather.
