Special Diets / Another Tm take off machine...

Hi all not sure if this one has been discussed.  I have been following the thermochef posts and was wondering if anyone can translate the info from this machine http://www.cookin-guydemarle.com/  I like the way it looks better than the thermochef, the only function that appears to be missing is the reverse function.  Seems like there is going to be more and more competition out there for our beloved TM, which may not necessarily be a bad thing.

Desserts / Dried cherry bites (inspired by Rara)

I loved the idea of Rara's cherry ripe bites, but don't like glase cherries.  These are a tweaked version inspired by Rara (thanks rara :-* :-*) Dried cherries claim to be a superfood and are very high in anti oxidants.  We love them.



Dried cherry bites (inspired by Rara):
makes 26 small balls:

Method:

Blitz sugar in TM for 10secs, spd 10
Add almonds, and coconut 20secs, spd 10
Add dried cherries, 10 secs, spd 7
Add boiling water and mix until mixture comes together, 10-20 secs, spd 4

Roll into small ball shapes and place, on a tray lined with baking paper, in fridge for ½ an hour.

When ready to coat with chocolate break chocolate into pieces and grate 10secs, spd 8.  Melt chocolate for 1-2minutes, 50oc, speed 3

Take cherry balls out of fridge and dip into melted chocolate, until covered (can use a toothpick or skewer for this).  Place back onto tray and put in fridge until chocolate has set.

50gm organic desiccated coconut
120gm pitted dried cherries
1 tbls boiling water
100gm organic chocolate (milk or dark)


Preparation:

Chit Chat / organic palm olein oil - help please

I am wondering if anyone has some factual information on this product.  I've just noticed that my favourite corn chips now have this listed in its ingredients  ??? ??? ??? and I am wondering if this is something to avoid or if it's ok.  I do know that orangutangs are losing their habbitat to plantations of palms for oil production.  Food is so complicated now  :( :(

Recipe Requests / Quark Cheese

This week I made Isi's philly cheese  ;D ;D.  I managed to find some quark cheese, but looking at the ingredients I am wondering if quark is just another name for yoghurt cheese.  Does anyone know if they are the same? :-\ :-\ The quark was very expensive and it would be great if I could make my own.  Thanks

Condiments and Sauces / Laksa Paste

Laksa Paste
Ingredients:

•               4 candlenuts or macadamia nuts
•   2 cloves garlic
•   1 onion
•   2 -3 cm fresh ginger
•   2 stalks lemongrass, white part only
•   6-8 leaves Vietnamese mint, (Laksa leaves)
•   6 dried chillies, soaked and chopped in ¼’s
•   1 tbsp shrimp paste (omit for a vegetarian option – but replace with salt to taste) – can use dried shrimp as an alternative
•   3 fresh coriander roots
•   1 tsp ground turmeric
•   1 tsp ground coriander
•   1 tsp paprika
•   1 tsp ground cumin
•   1-2 tbsp olive oil

Method:
•   Grind nuts spd 10, 10 secs.
•   Add garlic, onion, ginger, lemongrass, mint and chillies to TM bowl. Grind spd 10, 20 secs.
•   Add rest of the ingredients, except oil, and grind spd10 for up to 2mins stopping to scrape down the sides a few times. When it becomes a paste like consistency add oil and mix spd 5, 30 secs.
•   Ready to use straight away or can be frozen to use later (ice block containers are a great size for this).

Vegetarian / Pumpkin and spinach risotto

Name of Recipe:Pumpkin and spinach risotto
Number of People:5-6

Ingredients:

150g Parmesan cheese (block)
50g olive oil
1 medium onion, peeled & quartered
1 clove garlic
1tsp ground coriander
1½ tsp ground cumin
½ tsp ground cardamom
390g Arborio rice
100g white wine
1100g water
2 tbls veggie stock concentrate
400g pumpkin, peeled and diced into 1cm cubes
100gm baby spinach leaves



Method:

Pulverise Parmesan for 10 seconds on speed 9 set aside
Place onion and garlic in bowl and chop on speed 5 for 3-4 seconds
Add oil and spices and sauté for 2 minutes at 100'c speed 1
Add rice and wine and sauté for 2 minutes at 100'c  :-: speed 1-2
Add stock concentrate, water and pumpkin cook for 16 minutes at 100'c  :-: speed 1-2



Put baby spinach into thermoserver. Pour cooked risotto on the top of spinach (leave to sit for 5 Min's). Stir through ¾ of the Parmesan (save the rest for people to add more if they want) and serve immediately - lovely with a green salad.Modified by Jane Cisera from a recipe Posted by Karen on http://brazen20au.blogspot.com/



Tips/Hints: This is a very soupy risotto but if left for five Min's in the thermoserver it does absorb most of the liquid.

Hello all.  I am having a demo next week for a mother's group  ;D ;D.  They want to see how quickly the TM can make baby food.  Unfortunately I got my TM after all of my babies were babies  :-\. Does anyone have some suggestions on what the TM is great for when it comes to babies - especially babies that are only just starting on foods. Do you have any suggestions on what I can make at the demo for them to see?  I'd like to make the baby rusks but don't like the idea of using formula milk, sugar or the wheat germ - is there anything else I could substitute here?  I would great appreciate any help and ideas.

I have a customer who is interested in a recipe for naan bread or chapatti to go with the tomato/lentil dahl.  I imagine there is something in the new indian cookbook, but I don't have this one yet.  Can anyone help?

Recipe Requests / Rice Milk

Hi all.
I have just started to make my own rice milk (making my own costs about 45c in comparrison to $2.50 per litre).  My kids prefer the taste of the shop bought stuff and complain that mine tastes too watery  :-[ :-[.  Has anyone got a different rice milk recipe that they use and that has more of a shop bought taste (It does make me suspicious of the shop stuff, how do they get it white and how do they get it to taste like something other than water when they say they have no sugar or additives and its all organic ??? ???).

Vegetarian / Vegetarian pasta sauce

Name of Recipe:Vegetarian pasta sauce
Number of People:6-8
Ingredients:

100 gm block parmesan cheese
1-2 cloves of garlic
½ onion
1 -2 long fresh red chillies (optional)
1 large carrot chopped in large chunks
80 gm celery
50gms olive oil
3 x 400gm tins crushed tomato
2-3 tsp dried basil
2-3 tsp dried oregano (can use fresh herbs, but chop after cheese and set aside)
2 bay leaves
50gm red wine
2 tbls tomato paste
1 tbls veggie stock concentrate (made in TM)
½ head of broccoli chopped into small florets
Handful of beans chopped into pieces
1 small zucchini diced
Small handful of mushrooms sliced
1 small red capsicum sliced or diced


Preparation:
Chop cheese into chunks and grate on speed 7, 8 secs – set aside.
Chop fresh herbs, if usuing speed7, 5 secs - set aside
Chop garlic speed 5, 7 secs.
Add onion and chilli (if using), chop speed 5, 7-10 secs
Add celery and carrot, chop speed 5-6, 5 secs
Add oil and sauté 3 minutes 100˚c on speed 1.5
Add red wine, tinned tomato, herbs, tomato paste, and veggie stock concentrate. Cook 5 minutes 100˚c,  :-: speed 1-2
Add fresh veggies and cook 10 minutes 100˚c  :-: speed 1-2.

Serve on favourite pasta noodles with parmesan cheese (grate in TM).

Tips/Hints:This sauce will freeze well.  The quanity makes almost a full jug and is simple and quick to prepare. I usually put on water to cook my noodles when I start making the sauce and find that the whole meal is then ready in around 15 minutes. A quick and tasty mid-week meal.

Introduce Yourself / Technologically challenged new member

Hello all.
Just like to introduce myself. After being a member for some months my mother (who is in her 60's)  finally helped her (me) technologically challenged daughter  :-\ and showed me how to post a message  ;D. I have been able to read lots of posts, what a wonderful lot of people you all are and such an amazing source of inspiration and information, but how to introduce myself was beyond me. So here I am. I am a passionate TM user and have had mine for 18mths. My primary reason for getting a TM was health and wanting to remove additives from my family's diet (1 husband, 3 sons, a whippet, 6 hens and 3 guinea pigs) :D :D. The TM has helped with this goal above and beyond my expectations.  I use my TM usually a minimum of 3 times a day and often more. In fact I love my TM so much that I am training to become a consultant in Central Victoria - Bendigo area. I'll be underway early Feb. I am a little nervous about it all and excited about being able to share and show people the amazing things the TM can do.
