It will be a while before I need marmalade again Chookie. DH doesn't eat it so unless I cook with it, I am going to take a while to get through the 3 jars plus the remnants of the orange one I did recently. I haven't been putting the extra tblspn lemon juice in with any of my batches because I didn't even see it in the recipe  :-)) :-)) I have no idea what type of lemon as it is my neighbours and I just pick what hangs over our fence. Will try the less cooking suggestion next time.

How about a mango smoothie Sandy. This recipe makes 1 glass and comes from Women's Weekly Simplylite Food.

The flesh from 1 ripe mango.
150ml light evaporated milk, chilled
1 scoop low-fat ice-cream
1 tbsn icing sugar
Ice cubes

Place all ingredients into the TM bowl and blend until thick and creamy.

1.8g fat  & 1519 kj

I Love Bimby has asked me to post this recipe as her computer is still out of action.

Vegan Custard

Zest of 1 lemon
60g sugar
500g soy milk (can use rice, almond or any other alternative milk)
20g macadamia oil
30-40g cornflour or 50g plain flour

Pulverise lemon rind and sugar together on speed 9 for 10 seconds. Scrape down the rind and icing sugar from the sides of the bowl.
Add all of the other ingredients and cook for 7 mins  at 90o on speed 4.

Whoever did it before said it needed extra time but I think perhaps 1 hr 15 minutes might have been enough. The meat just falls off the bone when I do it in the oven in a red wine sauce and there was no way these even looked close to falling off the bone, even after 1.5 hours. Got to try these things from time to time though.

I made brioche for my consultant using the TMX when she came to give a delivery demo and she asked what it was - I told her Brioche and she said "Is that what it should look like?"

  ??? ??? ??? I thought the consultant was supposed to show you how to use the machine during a delivery demo and not the other way around - no keeping a good cook down, Thermomixer  ;) ;) ;)

I agree, wonderful suggestion. Might be worth me doing another batch of risotto just to get the 'gravy' - could freeze it in batches.  I'm sure it would be nice over chicken too, not just vegies?

Is the taste the same as roasted red capsicum MJ?  Certainly sounds an easier way to do them than under the grill if that is the case.

I just googled this question and found a chap who actually makes it for his wife.  He didn't give the exact quantities, just said he makes it out of milo, flour and milk in the microwave.  Interesting point he made - he 'has to watch it or it will go vesuvius on you' so just bear this in mind if you try it and let us know how it went, won't you.

I didn't know that MJ, what are over-ripe apricots good for then - stewing perhaps?  Had a visitor over Christmas who gave me 1/2 a bucketful of green apricots and boy did they ripen quickly ??? ??? Have them in the fridge now to slow them down I hope but was thinking of doing a batch of jam until I read your posting.

It doesn't say Snoozie - I put 1200mls in.  I went by what the instructions were for cooking dry pasta in the EDC.
