Everyone raved about the Pumpkin and Wattle Seed bread that we enjoyed with our Bush Tucker lunch while on our bus tour, in WA.
I think that this is pretty close to the texture and taste. Hope you enjoy it.
200g of cold or warm roasted Pumpkin, ( choose a bright orange pumpkin)
300/350 g warm water, this depends on the amount of moisture in pumpkin.
3 dessertspoons of ground Wattle Seeds
550 of Bakers ( bread) flour
1 teaspoon of both ground coriander and cumin
1/2 teaspoon of coarsely ground black pepper
2 1/2 teaspoons of dry yeast
Pumpkin and Nigella seeds ( black cumin ) for crust.
Place pumpkin and 50 g of water and blend on speed 7 for 5 seconds, scrape down.
Add all dry ingredients and 1/2 remaining water.
Knead for 4 minutes, adding more water to make a soft dough.
Rise in bowl , in warm place, until it fills the bowl.
Sit back on base and Knead for 2 more minutes.
Tip out onto floured silmat and shape free form or place in lined tin..
Spray with water, slash top and scatter with seeds.
Cover with plastic and let rise to at least double.
Bake in oven, 200/220 o. C. , with bowl of water in bottom. 30 mins., turning 1/2 way through.Remove from tin and lay on side! Bake a further 10 mins.
Cool on rack
The dough will be a bit sticky because of the pumpkin.
If you can't buy the Wattle seeds, make it without but increase the pepper to 1 teaspoon.

DH ate these 3 slices for lunch. Said he had to make sure it was just right!!!!

Yes, Chookie - http://www.andrewfielke.com/store/ - but beware when you get to the checkout. I ordered two items which added up to $19.50 but there is a mistake on their website and it told me the postage was $45, when in fact it was $9.
So if the same happens to others, phone 08 7225 0424 and they will sort out the ordering.

Chookie I seem to remember the tour guide (can't remember his name) saying it was pumpkin, sun-dried tomato and wattle seed bread. Am I remembering this wrong?

I knew you would beat me to it Chookie! hahaha, I have been swamped…actually roasted some pumpkin to do it whilst you were still here living it up, but never got past that point!

DD, think you are right, forgot about the Sun Dried Tomatoes. If you wish to use them , put a few, about a dessertspoon full in with the pumpkin at the beginning. I probably didn't miss them as the pumpkin I used was particually tasty.

It's deeeeelishous. Up there with the nicest. I added 60g sundried tomatoes, slashed the top just before putting in the oven and poked in grated cheese and then sprinkled pepitas and sunflower seeds(http://img.tapatalk.com/d/12/09/09/vu2emuzy.jpg)

Can anyone tell me what Wattle seeds taste like? Do they have a "nutty" taste?
I really want to make this bread, but my DH has a nut allergy (or is that fear?) and if anything smells or tastes like nuts (even if it's not nuts) he will refuse to eat it.

My first try of Pumpkin and Wattleseed bread tasted rather yummy tonight.
Must try harder in following all the finer points of your method in future, though. (I mucked up a few steps, but it still turned out.)

I made this today Chookie and was very pleased with it. I added 60g sun-dried tomatoes and thought I was in trouble when the mixture was quite moist. Wasn't sure just how much water to add but carried on regardless and being such a nice day here, I left it in the bathroom with the door shut which was the warmest place in the house. It rose beautifully in 30 minutes for both rises in there and this is the resulting loaf.
Only thing I will add next time - 1 maybe 2 teaspoons salt. Just felt there was something missing so sprinkled salt over the butter on the bread and yes, that is what I needed.

I picked up some Wattle seeds in Adelaide. They are Herbie's brand.

Try 1 tablespoon of wattleseeds in lieu of vanilla essence in the EDC ice cream recipe cookie. It is simply divine.

I have this rising at the moment. It really needs to go in the oven but I have cakes in there. Oh we'll.

When I saw this bread mentioned this morning in one of the threads, I decided to give it a try to serve with a stew that I was making today. I decided to make into rolls instead of a loaf so I could freeze easily. It made 10 dinner sized rolls.
I roasted what I thought would be enough raw pumpkin (300g) but once cooked it only weighed 136g :-)) so I added enough sun dried toms (ones that aren't marinated in oil or vinegar) to make up to the 200g.
I went to get the rest of the ingredients out to discover what I though were wattle seeds were in fact lemon myrtle seeds :o so I used the extra ground pepper like Chookie suggested.
I followed the recipe except where you do the kneading after the first proving, I added some grated tasty cheese to knead into the dough. I weighed it and divided into 10 balls and put on a tray.
After the second rise I baked for about 15 mins, then I turned them onto the rack so the bottom could get more crunchy and baked a further 5-6 mins.
I had one as soon as out the oven and I loved it I must admit. I had another a bit later with my stew and liked it just as much.
I did brush the tops with melted butter and put on some pumpkin seeds and Nigella seeds, but I found they fell off onto the tray when I moved them so I wouldn't bother next time. (I did enjoy picking at the roasted pumpkin seeds though so they didn't go to waste) :D
I have now ordered some wattle seeds and when they arrive I will make another batch of these for sure. Fantastic recipe Chookie. ;D

They look very tasty Julie. Chookie was so clever with this bread. As she tasted it, she and Tenina discussed what was in it and then the clever Chookie recreated it.

Thank you girls and Thank you to Chookie for making up this great recipe (thanks Cookie for pointing that out). I very rarely eat bread these days so was so thrilled with the flavour of these and I really like having the convenience of having rolls in the freezer for those times. Once I've made them with the wattle seeds I will report back on what I thought of them. :D
