Title: Steamed Garlic Rice
Post by: bron on February 05, 2009, 11:41:22 pm
Not too sure if this a the right place to post this recipe, but this is the best possible rice in the whole world, my kids love it, and want it daily, so I have a big tupperware full in the fridge, ready to heat up in 1min in the micro, and accompany anything from a fried egg, to a chicken breast or some fish. How can such plain steamed rice be sooooooo amazing, try it and you will see why. It has to be the round grain rice, the real Spanish or risotto rice....try and enjoy.....
 :-\

Garlic Rice
4 to 6 servings

Ingredients: 50g olive oil
                          3 garlic cloves
                          800g water
                          salt
                          350g round grain rice

Preparation:

Place garlic and olive oil in TH, 3 mins, Temp Varoma, Speed 4.

Add water and salt and place empty basket inside TH. 7 mins, Temp Varoma, Speed 1.

Without opening lid, pour rice into the TH through the hole, (don't forget to have placed the basket!) 13 mins. Temp Varoma, Speed 4.

After every 3 or 4 mins try and stir the rice around with the spatula. And add a little more salt directly onto the rice at the first stir.

When finished, with the spatula, take the basket out of the TH, and tip into a largish sized dish, fluff it up a little and leave it to stand for 2 minutes before serving.

It is the best and easiest possible rice! Will try and work out how to get some photos on..........promise ;D

Tips/Hints:

Ceejay: Yummmmm!!
I substituted basmati rice and it worked a treat!  Kids loved it too!

JD: I can vouch for that Ceejay.  The other night I thought I'd use up some basmati rice (which is supposed to be better for you than other rices and I haven't used it since doing Brons recipe using round rice) and although it was OK, was no-where near as nice as using the round rice. Believe me, if Bron says something, I just follow her orders - she knows what she is talking about.

Brazen: has anyone tried reducing the oil?

Bron:Yes of course! I use 25 or 30 grams now, diet of course!

Bron: By the way, you can up it to 400g, that it the max. amount. Same water etc, may just help you that extra bit !

Maddy:I used long grain rice, and it probably sat for 15/20 minutes in the thermoserve whilst I cooked the enchilada's.
The grains were seperated, and cooked perfectly.

Maddy:Made this again tonight, but turned it into taco rice.
I followed Bron's recipe, with just 2 garlic cloves, and added a 35g packet of reduced salt taco seasoning, and mixed it in with the rice and proceeded with the recipe.  I didn't add any extra salt though.
Made a lovely change with enchilada's tonight.

Nay-nay: Brons garlic rice is my faourite way of doing rice but just lately I have tried making Jasmine rice after watching Jamie Oliver by just adding 10 tiny balls of the Jasmine dragons pearls to the rice. It is very nice.

Maddy: I love this rice, and tonight I chopped up and quartered 1 red capsicum, 1 green capsicum, and 1 red onion.
chopped for 8 seconds, speed 4......then placed into varoma and steamed whilst the rice was steaming.
I spread it around the varoma and left some steam holes vacant.
You could add any small chopped veg.
I just stopped the cooking once, to give the rice a stir then carried on cooking.
Mix the both together in thermoserve, and leave to sit til ready.

Leej:Made this tonight, was lovely. Used aborio rice, seemed a teeny bit gluey, so will try a different rice and see what we like better!

thermohaven: The best rice to use for cooking in the basket is either jasmine, long grain or basmati. Calrose and arborio come out too gluggy, whereas the other 3 come out nice and separate.

Nay-nay: Yeah thermoheaven they would be my choice and brown rice needs a good 30mins.

ILB: Can't believe it has taken me THIS long to try the garlic rice. Made it with Bron's tomato meat balls and was delish!!

Auds:Made this tonight. It was very tasty. Next time I will cook for a few minutes extra to keep the boss happy.  Also will halve the oil. I don't think it needs so much.

Uni: Its the best rice ever ,i make it about 2 times a week

Auds: Yes I left it about five, mins but was a little under. Also the boss likes his rice well cooked

Uni:yes 5 mins is plenty of time, oh just make the boss happy and cook it longer , add 900grams of water next time just to be sure it does not boil dry, keep an eye on the temp and speed it will spill over,it will still cook on 90 and lower speed

Chicksta44: Made this tonight. It was excellent. Have plenty left so have put it in the fridge to have with some steamed veg for lunch tomorrow. I served it with baked lamb chops with the French onion soup mix on top, and Cookies steamed spinach dumplings! Yumo!  Thanks for the recipe Bron.

GF:Can't recommend this too highly!! Made it for the first time today and it's gone!!  Amazingly easy  . . . amazingly good!!  I know this recipe was posted some time ago, but thank you very very much.

Tam: Super delicious!!!! I found mine was a little too firm but after sitting in the Thermoserver for 1/2hr it was lovely.  Will be making again and again. thanks Goldfish for bumping the thread as sometimes we forget about the classics!!!

JD: I think it is important to stir this every 3-4 minutes through the hole in the lid as Bron suggested - it does tend to help it cook properly.  Be careful though, that steam is very hot.

Lexi: I made this last night and loved the flavour.  I used arborio rice.  Mine came out crunchy so I added more water and a few minutes more so it was more cooked, but it's still touch on crunchy side.  I did exactly as recipe says in quantities and stirring etc.  Actually every time I cook rice in TMX it is crunchy or sticky.  I cant master rice in TMX What's max amount of water I can use as mine never overflows?

Courton: Made this tonight with basmati rice and cooked it for 4 mins longer than specified. Perfect! Served with tiny pieces of preserved lemon (home made) on top. 5/5.

Jam: Made this tonight to go with my stir fry - was very impressed!
I am not a rice eater but still treated myself to a taste, but hubby said it was absolutely amazing, fragrant and just like we have had with stir fries in Asia.
I did a half batch but still using the same amount of water and it turned out perfect - texture and taste!

DJ: Made this tonight. Used basmati.
Ended up in pan on Aga to get it cooked through.

Hally: Followed Brons instructions 100% apart from using basmati rice. Cooked to perfection, will just re-heat later. It tastes lovely

OK, what is "round" grain rice?  I know of short for risotto or sushi, medium and long grained.  Never heard of round.  HELP !!!!
Title: Re: Steamed Garlic Rice
Post by: Thermomixer on February 06, 2009, 04:03:36 am
Round = short grain =pudding rice for Caroline = arborio/risotto - absorbs higher proportion of water than med/log grained varieties.

I use long-grained rice with spices such as coriander and cumin seeds for a similar dish with onions, garlic and chicken stock in the TM bowl.  It may take slightly longer to cook than short-grain, but the results will be good.

Lol I still can't get over the amount of rice your kids eat Karen. Would have been nice when rice was half the price it is now about 18 months ago but not too sure about now  :P
Title: Re: Steamed Garlic Rice
Post by: brazen20au on August 08, 2009, 04:00:14 pm
the problem is that when i serve them rice they won't eat anything else, jsut the rice. so i've started having to tell them they aren't allowed to have seconds (thirds, fourths lol) unless they eat some of the rest of their food too!

I am sure this is the dumbest question in history but do you blitz the garlic before starting or leave them whole?
Title: Re: Steamed Garlic Rice
Post by: bron on October 28, 2009, 05:29:45 pm
Hi Snoozie, no problem! Yes, although you will find that 3 mins speed 4 Varoma will blitz the garlic beautifully, then add water and then the rice (dont forget to put the basket in!) Guess who forgot that once! ??? ??? :-)) :-))

I pondered that one for ages as well Snoozie.  It wasn't until I made it that I realised speed 4 would blitz the garlic perfectly.  :)

I cooked dinner, steamed veges and made custard.  I undid the blade like shown to wash the custard off it (was really thick because I put a bit too much cornflour in).  Anyways I got distracted and then I decided to make one of the drinks in the book so I put the blade back in, filled it up with water and thought I'd spin it to dislodge the custard a bit before wiping it clean.

I forgot to put the base back on and when I realised I pulled it away from the machine and the vast majority of the water went on the floor lmao but some of it also went into that bottom section (from where I had tried to connect it) and fell on the table and went under the machine as I was pulling it away.  I didn't think too much of it just turned it off and got a tea towel to dry the bit where the jug connects and got DH to lift it so I could pat dry underneath the machine and dry the table so I could put it back down.

Went to turn it back on and it shorted out the power to my house.

Rang consultant nearly in tears lolol poor guy.  That and it took me 3 goes to get through as my mobile has crap reception where we live lol  He's going to call me again tomorrow after speaking to GL.

I don't know why as the amount of water that would've got to it was not significant (or I wouldn't have turned it back on!).  I'm hoping it will be okay in the morning... I mean, we haven't even had a naming ceremony or anything!!!!!
Title: Re: Steamed Garlic Rice
Post by: faffa_70 on October 29, 2009, 02:18:06 pm
Well, I can assure you that you are not the first person to do that and you won't be the last, there are post's on here about it!!!!

TMX is designed so that any liquid runs away from all the important bits generally so unless you really flooded everything should hopefully be ok for you.

Most homes now days are really sensitive with the circuit switches and it could have just been all the moisture around. Give it the night to dry out and try again in the morning.

Otherwise I hope you have good contents insurance  ;)

Just think when it all works in the morning (yes I am a positive person lol) you can have a double celebration!!  :o :o
Title: Re: Steamed Garlic Rice
Post by: Snoozie on October 29, 2009, 02:23:42 pm
After I calmed down (had a big cry on another forum lol) I realised that the amount of water involved wouldn't have even blown up my el cheapo kettle so I am feeling somewhat positive that it will be okay.  I only put a litre in and my floor got most of it! Was just the icing on the cake for a bad day unfortunately and I was so excited... had plans to make scones after the drink and lemon butter and probably after that I was going to raid my pantry to see what else I could concoct!

So it's sitting on a bath towel in the kitchen now just to make sure every bit of moisture is getting sucked up!

Tomorrow I will make myself some coffee liqueur I think lmao!  Not that I can drink it but hey! It's the thought that counts lol

Hey snoozie! what bad luck, on your first night too! My Mum (bless her) thought she would put Clatter back together and forgot to put the base on, and I didnt realise. I even cooked a Bolognaise sauce in it, I was gobsmacked, when I went to pour it out that I had cooked  in it without it being properly assembled! However, fortunately mine was ok, must have been the speed soft which stopped it all poring out! Don't worry I am sure that it will all dry out perfectly! ;) ;) ;) ;)

Sorry was fak when I posted last so couldn't really go into details but yayyay it works!

And yes, lots of fun!  After I determined it was working I made (from EDC) the carrot and orange juice (had to add sugar though!), buttermilk scones (yummo!) and bolognaise sauce (yum!).   I also made bron's concentrated vege stock and the mashed potatoes (mmmmm yummy) from here.

Today I made rice flour and then did the semolina with apple (using rice flour) but kids looked at me like I was insane and didn't want a bar of it.  Definitely an interesting taste!  For dinner we had the minestrone from EDC and it was a winner with everyone.

Trying the garlic rice tomorrow with the meatballs from here. :)

This is his exact recipe in his words:
JASMINE RICE Put a medium saucepan on a medium heat. Add the mug of rice, a pinch of salt, a splash of olive oil, the 2 jasmine teabags or flower, and cover with 2 mugs of boiling water (use the same mug you used for the rice). Cover with a lid and cook for 7 minutes, then take off the heat and leave to steam with the lid on for 7 minutes. http://www.jamieoliver.com/recipes/seafood-recipes/thai-red-prawn-curry-jasmine-rice-cucumb

I love this rice, and tonight I chopped up and quartered 1 red capsicum, 1 green capsicum, and 1 red onion.
chopped for 8 seconds, speed 4......then placed into varoma and steamed whilst the rice was steaming.

I spread it around the varoma and left some steam holes vacant.
You could add any small chopped veg.
I just stopped the cooking once, to give the rice a stir then carried on cooking.

Mix the both together in thermoserve, and leave to sit til ready.

Made this tonight, was lovely. Used aborio rice, seemed a teeny bit gluey, so will try a different rice and see what we like better!

Ds munched it all down!

How long did you cook it for?? Aboroi rice never needs as long.  ;)

 :o Oh,  :D

I grew up in a house where roasts, meatloaf and mince was on the menu, I didn't even try pasta until I was 16!!

Rice is still something I am learning about, whilst pasta has a firm place in our house, rice is not there yet.

I cooked it for the amount written down, so will cook it a little less next time, or find some 'round rice'  ;D Thanks Nay Nay!

The best rice to use for cooking in the basket is either jasmine, long grain or basmati. Calrose and arborio come out too gluggy, whereas the other 3 come out nice and separate.

Can't believe it has taken me THIS long to try the garlic rice. Made it with Bron's tomato meat balls and was delish!!

Though DD was a little fussy about it. But she's having a bit of a fragile night anyway  :-))

Made this tonight. It was very tasty. Next time I will cook for a few minutes extra to keep the boss happy.  Also will halve the oil. I don't think it needs so much.

Thanks for sharing

yes 5 mins is plenty of time, oh just make the boss happy and cook it longer , add 900grams of water next time just to be sure it does not boil dry, keep an eye on the temp and speed it will spill over,it will still cook on 90 and lower speed

Made this tonight. It was excellent. Have plenty left so have put it in the fridge to have with some steamed veg for lunch tomorrow. I served it with baked lamb chops with the French onion soup mix on top, and Cookies steamed spinach dumplings! Yumo!  Thanks for the recipe Bron. :)

I think it is important to stir this every 3-4 minutes through the hole in the lid as Bron suggested - it does tend to help it cook properly.  Be careful though, that steam is very hot.

When I read this recipe I thought it was just rice with a garlic flavour blow wrong could I be! It's really, really nice. The kids loved it. Thank you!

I made this last night and loved the flavour. I cant master rice in TMX :( What's max amount of water I can use as mine never overflows?

Made this tonight to go with my stir fry - was very impressed!

I am not a rice eater but still treated myself to a taste, but hubby said it was absolutely amazing, fragrant and just like we have had with stir fries in Asia.

I did a half batch but still using the same amount of water and it turned out perfect - texture and taste!  ;D

I have forgotten to thank Judy for suggesting that I cook my dud arborio rice this way after my failure with risotto. I have to agree with everyone that this rice is delicious. ;D It transformed my very average rice into above average rice!

I make this often DJ and use arborio which takes longer than basmati to cook and never had any problems with it.  I wonder why it wouldn't cook for you  ??? ???

Followed Brons instructions 100% apart from using basmati rice. Cooked to perfection, will just re-heat later. It tastes lovely :)

Has anyone tried this using brown rice?  I know it would take longer to cook.

Next time I need rice I'll try it and see how it goes.  Will report back in case anyone else is interested.  :)

Yes I did, I was sure of that.
It was only a couple of minutes in a pan with more water and then it was fine. The supper was not a good one as DH didn't like the turkey leftovers....

I finished the left over rice last night, the others all had pizza!

I made this to accompany Chookie's Spicy Coriander Chicken (http://www.forumthermomix.com/index.php?topic=8731.msg363900#msg363900) for dinner this evening.
Used Tenina's Confit Garlic (Purée) and Garlic oil (http://www.forumthermomix.com/index.php?topic=14520.0) in the recipe.Worked really well and tasted delicious.
