Starters and Snacks / Olive Oil Crackers
« on: December 29, 2014, 03:08:01 am »

Name of Recipe:Olive Oil Crackers
 Number of People:
•   1 (150g) cup of flour
•   3 tbsp. olive oil
•   4 tbsp. water
•   Pinch of salt

Optional extras – sesame seeds, caraway seeds, poppy seeds, grated parmesan, black pepper, thyme, rosemary, and extra salt
add all of ingredients to bowl, knead 30 sec, rest for 20mins knead for 3.30

Divide the dough into eight portions. Then roll your dough out just a little, adding a small sprinkle of some of your ‘extras’ if you are going to

Roll out the dough as thin as you can without it breaking.

Roll your extras in, (like the sesame seeds) as this will make sure they are well incorporated into the crackers

Lay dough strips on a tray and brush with a little extra olive oil on the top; add a sprinkling of extra salt if you wish

Bake at 200C for approximately 6-7 minutes, then switch the trays around in the oven – top to bottom – and bake for another 6 or so minutes or until lightly golden in colour. Crackers should be crispy through.

i did one tray at a time, baked for about 9mins

I have been making this rice weekly

Fried Rice in Pressure Cooker by Kellie Haley Chapman

Brown 1/2 onion, 2 cloves of garlic, 200g diced bacon, then add 2 tbsp. soya sauce, 2 cups of washed rice, and 2 cups chicken stock + 2 cups frozen/fresh mixed vegies.. I set the pressure cooker on for 10 min but will only do 8 next time. After pressure cooking,  I then added some cooked egg and more soya sauce for taste. It is very nice and took me 5min to put it all together

i will add more soya sauce and  eggs as i need too

i place the rice in a large tray to cool down quicker, i also fan it

DJ -  Nutella brownies: I made half quantity using SR flour and just blitzed in Thermy.
Baked in a mini muffin tin, decorated with a whole hazelnut and white choc chips.
Delicious and very quick pudding. You can taste the Nutella. Would have been better if we'd had ice cream to go with.

A very thick and spicy soup

I don’t add salt to my veg stock if u do don’t add any until the end if it needs it add it then.

hints/tips from members

ElleG -  it is spicy and hot, but we like it like that!  I used a whole chilli with the seeds, 2 small carrots and a small sweet potato - didn't have quite enough pumpkin. It was a clean out the fridge type soup. I served it with caramelised corn and coriander. I'll simmer some prawns for me and fish for DH in the soup for tomorrow's lunch.
