Title: Recipe Review: Fruit and Nut Tiffin: I love Chocolate I love TMX p32
Post by: KarenH on January 01, 2014, 04:20:40 am
What can I say but too easy and too delicious!

We didn't have any hazelnuts, so I substituted macadamia nuts. The recipe calls for caramel, and recommends using the sticky toffee sauce from the UK Fast and Easy Cooking.  Since I don't have that cookbook, I just used some caramel from a tin of caramel top'n'fill.  Wouldn't be my first choice, but I didn't have any homemade caramel on hand.  (If someone from the UK can PM me the recipe for the sticky toffee sauce, it would be great!!)

Despite sounding incredibly rich, the finished slice is not too sickly at all, and it is all too hard to stop just at one piece.

5/5  Highly recommended.

Karen that sounds delicious. Pity my DH has a nut allergy, so many lovely things I can't make.

I can pm you the sticky toffee sauce recipe, as I have that book.

Looks delicious Karen. I wanted to make this too, but didn't have the recipe for the sauce either or bought caramel. Would love to try it. Could I have the sauce recipe too please Katie?

Katie, Richard can eat pine nuts - why not use them instead of other nuts?

Richard can eat pine nuts Judy, but Ive always thought pine nuts are for savoury dishes and not sweet. I'm probably wrong, but I don't think I'd like pine nuts with chocolate or other sweet treats.

Katie I reckon you could easily make this without nuts.  The crushed biscuits and the fruit would be just as yummy.

Seems silly that you can't make this recipe if you haven't access to the Sticky Toffee Sauce recipe from the F&E  by Janie Turner.
So here it is ;D

Makes about 450g
120g unsalted butter, roughly diced
70g soft brown sugar
50g granulated sugar
150g golden syrup
80g milk
few drops vanilla essence
1. Weigh butter, sugars and syrup in the bowl and cook 5minutes/80c/ speed 11/2
2.Add the milk and vanilla.Cook 3minutes/100c/speed2.Pour into a jug and leave to cool completely. It will thicken as it cools.

Thanks CC. It's annoying when recipe books refer to a recipe in another book. Think this will save a lot of pms and emails. Much appreciated xox

Wow Judy I didn't know that, I'll keep it in mind if I need to substitute nuts in the future to try pine nuts.

I often do that Karen, just leave the nuts out and put extra fruit or chocolate in.  It's a pain though, as sometimes I know that whatever I'm making will taste better with nuts.

Thanks CC for posting the recipe  :D
I had just logged on to pm it to Kimmy and know I don't need to.  Cheers!

This is a really nice slice. Bit like a fancy hedgehog. Didn't have any dark chocolate (pantry rats!) so used milk chocolate instead. Chopped the harder nuts on speed 5 to get smaller bits. Next time will chopped the cherries to make it easier to cut the slice.  It takes a little work to push the slice into the tin (I used my Tupperware slice container) but worth the effort. The caramel sauce is very sweet and I used it up as a sauce for sticky date puddings. Will make again.
