Title: PEPPERMINT CRISP FUDGE

I found this recipe on the Thermolicious Site and made it today.  It makes a very rich fudge but it's very nice.



PEPPERMINT CRISP FUDGE

100G Peppermint crisp bars ( softly crushed)
500g dark chocolate
395g can condensed milk
30g butter
20g creme de menthe

Line a 27cm x 18cm slice tin with baking paper.
Place chocolate (dark) into Thermomix and chop for 25 secs/speed 8
Add condensed milk, butter, liqueur and cook 5 mins/90C/Speed2
Add Peppermint crisp and mix for 30-40 secs/Reverse/Speed 1  (I needed to also fold in with spatula after)
Pour into prepared tin (very stiff) while the mixture is still warm and smooth the top.
Allow to cool and cut into  small squares.
Store in an airtight container

This looks yummy!  Do you think I could leave out the creme de menthe though?  We dont have any, and I dont really feel like buying a bottle just to make this.

Thanks Trudy.  I have been avoiding looking at this.  Now I know  I will have to make it.  Like Karen I don't have the liqueur but do have some peppermint essence.  A couple of drops might do.

Hi Karen & Chookie, yes I think you could leave out the creme de menth but might pay to up the peppermint crisp.  Next time I make this I won't crush the crisp as much as I like the look of the green shreds through the fudge.  Will bring a few pieces on Sunday for you to try.

I'm  not really a fan of dark chocolate... How much do you think the flavour would change if I made it with milk choc instead?

I'm not a fan of dark chocolate either but I love this, great for me because it's so rich I can stop at having one!!!
Give it a go using milk as I'm sure it should work.  Goodluck!!!

I just left out the hazelnuts.  It is delicious, and oh so easy.

Made this today for you know who.  He has been asking me to make it,  since Trudy brought some to our get to get her for CC.  It is expensive to make but cuts into a lot of small squares.  Thanks for the recipe Trudy,  it is easy and delicious.

Made this fudge for Christmas hampers tasted great but just happen to check hampers before Christmas day and found this fudge had partially melted into the bottom of the bags and in one case leaked into the Santa carrier bag. I think it might be better to cook it for a little longer especially if making it ahead and if the days are going to be hot.

I made a version of this yesterday along with two batches of cookies and cream fudge. 12 bags fudge so far.

60 g butter, half a cup of sugar and 20 g glucose syrup 8 minutes 100’ speed 3 as per cookies and cream. Towards the end of the cooking time I added 1 tsp peppermint essence.
Then I added approximately 400 g of dark chocolate, some of it was chocolate mint and cooked a further 5 mins on 90’ speed 3.
Finally I added 150 g mint galaxy and about 25 g dark choc mint. Mixed 30 secs reverse speed 3-4.
Chilled cut into squares and in fridge. These are Xmas presents made early as I’m going away next week.
Put 1 cup  milk into the thermi pan to clean it and 80’ 5 mins speed 6. OMG the best hot chocolate ever!
Will let you know how it keeps, it’s bagged and in the fridge. I couldn’t get mint crisp bars at all when shopping yesterday.
