I made this today and it was really good. Think I will reduce the sugar next time too as it was a bit sweet, but overall really yum. I think it would make a good hot choc too, heat the milk in the microwave and then add the mix.

I made the chicken and cashews from the EDC tonight. I was very impressed by how it turned out. I used twice the amount of chicken in the recipe and I was worried it would take too long to cook but it was fine. I overcooked the vege though.

I didn't have any sherry so I made a lemon and soy sauce - it needs work :lol

Still morning here and I have made varoma meatballs and garlic rice for dinner, a batch of oatmeal and raisin biscuits and cheesymite scrolls. Doing well today :)

Yep, my butterfly went green after doing the butter chicken - still works though. Two is a good idea though

I don't like the way the TMX creams butter and sugar either, it's not how I'm used to seeing it. I use the butterfly too but once it is mixed it sends the mixture up the sides of the bowl and the butterfly doesn't touch it. Doesn't seem to affect the end result too much though

Sorry that it didn't work out for you Depome. I have been trying to find the original recipe but no luck so far. I did halve it when I made it and I posted the halved recipe but maybe I didn't halve the lemon zest and juice?

I just looked in my recipe book where I wrote the ammended for TMX recipe in and it definitely says juice and zest of 1 lemon.

I use a microplane to zest my lemons which works really well.

I tried this a few weeks ago and must have done something wrong with the Varoma part because my meatballs were hardly touched at all at the end of the cooking period. There seemed not to be much heat coming out through the lid into the Varoma tray? What was I doing wrong?

I ended up chucking the meatballs in with the sauce, knowing full well I would end up with a bolognese sauce rather than meatballs LOL but it still tasted great.

I made this tonight with frozen raspberries, very nice indeed but very rich! I might try the Fruity Dream in the EDC next time and see how it goes with one egg white

I made this the other and really liked it. Very crisp and refreshing. I left out the onion and used half a yellow cap that I needed to use up. But I didn't like it the next day at all so next time will only make enough for one serve. My apple wasn't too flash though so maybe with a fresher one it would be OK the next day?

Broccoli is a funny vegetable, if it's good it's great and if it's bad it's gross!

Tuna, Lemon and Coconut Pasta

Serves 4

Ingredients


200g pasta of choice
2 cloves crushed garlic
1 tblsp olive oil
2 zucchini, thinly sliced
Zest of 1 lemon
375ml can coconut evaporated milk
Juice of 1 lemon
1 tblsp cornflour
1 310g can corn, drained
425g can tuna in springwater, drained


Method

Put pasta onto cook (or cook in TMX after making the sauce)

Chop garlic in TMX, add olive oil, zucchini and lemon zest - saute for 3 minutes on 100  ^^

Add coconut milk, lemon juice and cornflour - cook 7 minutes on 90, speed 2 (I used the butterfly but not sure that it is entirely necessary)

Pour over corn, tuna and pasta and mix together.

Tips

This recipe came from a magazine and I decided to try it tonight with the TMX and it worked really well. The ingredients are a half serve and it made plenty, it easily would serve 4 people. The recipe called for 1/4 cup of sweet chilli sauce as well but I didn't have any and didn't find it lacking.

The butter chicken worked! I have tasted better so might have to play around with the spices (will check your recipe out Karen) but overall it was good. I also made chocolate custard which is sooooooo good :)

I'm about to attempt the butter chicken out of the EDc cookbook. I've had a few not so great outcomes with main meals but I'm told the butter chicken always works and is delicious. I searched it out and have read all the tips so wish me luck! I'll let you know how it goes :)
