I made two of these cakes today, the recipe doubled easily

I gave one to the friend who gave us the rhubarb, so I hope its good! We'll have some of our cake for dessert tonight

Made another one of these today for some friends, I didn't have enough almonds so added some macadamias. They were very happy with it

Good thing I bake good cakes otherwise I don't think I'd ever get rid of it

Would you believe I still have some rhubarb left and I'll be getting more on Monday?!

I might try a rhubarb chutney next

You could always freeze it for rhubarb puddings or stewed rhubarb in winter Amy.
