Title: Zucchini Cake A Taste of Vegetarian Cookbook

I made this the other day and we really enjoyed it. It has a lovely flavour. I made it in a 20cm round tin.
Tweaks
The walnuts were to be chopped for 15 seconds, this turned them into walnut butter. I liked the idea but if you wanted pieces of walnut you would need to do less time.
I chopped the dates for only 5 seconds as I wanted pieces of date in the mix.

Gosh I can't ever remember seeing this recipe before.  I am going to dig out my book tonight and have a look.  Thanks for the great review.  :)

I made this today and it is deeeeelicious  :D  Didn't change a thing and it was ok, but as cookie1 said if you like to have a bit of crunch with your walnuts and dates etc. do as she said.  I like the texture as is, plus the teens are fussy and possibly wouldn't eat bits  :-\

Bumping this recipe review up as we all are probably wondering what to do with our zucchinis atm that our gardens are producing  :)

I made this with pecan instead of walnut and cut down sugar to 95gr.  Enjoyed by all.

Yummy! But very sweet (although I rarely cook/eat cakes so most things are sweet for me), I think the raw sugar/date combination does it. Like Cookie, next time I might not blitz the walnuts for quite so long.
I liked that it used a reasonable amount of zucchini (210g) particularly as I have A LOT of it at the moment :)
I made it in a small bundt tin and the cake had a chunky but light crumb. I intend to freeze it in portions.
Sorry the picture is quite dark, it looked fine on my phone!

After reading the reviews I made this one earlier in the week.  We all really enjoyed it.  My DS wasn't initially keen because he saw a fleck of green in it ("what is Mummy feeding me now!!!"), but the yummy taste won him over. :-)

I made this today for the latest challenge.

The walnuts were chopped for 15 seconds and became like butter, this seemed like a long time to me and I think next time I will reduce the time.  I also reduced the sugar to 100g ( I do this in most tmx recipes).  I cooked it in a loaf tin instead of a cake tin at the suggested temperature and it took a lot longer to cook, that maybe because of my oven as everything seems to take longer.

All this said we liked the cake and I would make it again.
