Title: Cake help

Hi,
Hoping you can help me with my cake dilema.  ??? Since moving my cakes always rise high in the center and not evenly.  I though ages ago I had read that the oven is too hot. I have fan forced oven so usually cook about 10C less than the recipe asks for anyway. But do you think I can find where I read it??  :-[
I'm sure one of you will have the answer for me... please???  ;)  ;D

Probably the oven is too hot and the sides cook too quickly so that the middle of the mix then expands and breaks thru.

There are other reasons - but that would be the most likely.  Try dropping the temp about 10-20 deg next time.

Hi,  I find that when I am baking I DONOT use the fan.  Doing this gives a much better result.

Don't laugh - this could happen to you :o :o :o

Thought I'd try the orange muffins posted by trudy but also had read her solution for cakes rising too much in the middle (see above).  Thought I would try it without the fan so turned the oven on, proceeded to mix and prepare muffins for the oven.  Put them in the oven - what, it's stone cold!!!  Just found out my oven doesn't work if the fan function isn't turned on ;D ;D ;D ;D

ILB i'm sure i've read that a very damp (but not dripping) towel / tea towel wrapped around the outside of your tin helps. but i tried to find the source and couldn't.

Thanks Trudy - unfortunatly the when the oven is on so is the fan - there's no way to operate them seperatly. It's just a stock standard cheap oven.  Thankfully only renting. But when I get my own place....
