I would love to suggest some lovely vegetarian / vegan meals to you, Margaret, but many have cashews.  I will try to sort some options out that the meat eaters also will like.

Are you OK with lentil, beans, etc.?

That's very generous of you Marina.  I eat most vegetables and lentils and beans but I don't like tofu.   I can eat the odd nut occasionally but need to be careful because of diviticulitis, they are ok if they have been finely ground in the tmx and used in a cashew sauce etc.  Thanks again for the thought.

We had the leftover taco mince from last week. (It had been in the freezer!). I made a couple of large flat breads to have with it.

Another great resource is the recipe books from the Revive Cafe in Auckland, NZ. 

I am sure you know this already, but, just in case ... when cooking cashews soak in hot water for as long as possible - I find an overnight soak leaves them a bit slimy so I soak them in a bowl with hot water for an hour or so, rinsing and refreshing with fresh hot water every 1/2 hour or so once it cools down, then into the TMX on 9 or 10 for at least 1 minute to get a nice smooth mix.

Marina, I loved the list that you put together for Mab. The roasted mushrooms reminds me of one that I used to make. Similar ingredients but not baked. I also liked the Mexican Bean recipe but too many carbs for me.

Marina & Judy, thank you both for the list of recipes.  I had no idea there were so many recipes on the forum 1 or 2 people.   It will take me a while to look through them all but I will certainly check them all out.

We had a beef stir fry tonight with rice.

Mab I searched everywhere for liquid smoke, then I found some in a shop that sold American foods. It was just over $8 for a bottle.

Going to DD’s for roast lamb dinner. I’m taking the roast veggies and a mix of home grown tomatoes and zucchini’s.
While there I’ll pick some Rhubarb.

Tonight’s dinner was Curried Gnocchi and Chick Peas. It was very nice. We had it with left over Ciabiatta to slurp up the juices.

A Quirky Jo recipe - Vegetables with cashews and satay sauce; this might work for you, Margaret.  I have adapted my recipe to tofu which I know you don't like, but if you eat meat that is what the original recipe calls for. https://www.quirkycooking.com.au/2011/01/chicken-and-cashews-with-coconut-satay-sauce-and-coconut-rice/ It makes a huge meal, but is easily frozen if necessary.  The sauce works well with either coriander or parsley.
