Bread / Proofing Bread in Varoma
« on: Today at 03:48:54 am »
When you live in a cold climate, proofing Bread in Winter can be a challenge.
I’ve recently tried proofing in the oven at a low temperature with the light on and more recently using the Varoma.
In the oven, I heat the oven for a few minutes at 50, turn the heat off but leave the light on.
In the Varoma.
Put 1 litre of water in the TMX bowl.
Set temperature to 75 degrees and speed 1.
When steam is coming out the hole set Varoma over the hole.
Place 1 or 2 small glass dishes into Varoma, ( about 2 cm deep)
Place dough into a round silicone cake dish. Place this on the glass dishes.
Place some small utensils that will give a bit more height at end inside Varoma so that when the dough raises it has room to expand upwards.
Cover with a tea towel or silicon sheet. Steam for 20 minutes, speed 3 at 75 degrees.

Notes. The aim is to creat warm steam without cooking the base of the bread dough.
This is a loaf using this method. Also set up of Varoma.

Mab, they take 10 minutes. I’ve found that I don’t need to do a double rise. Just leave at room temperature and start cooking.

Marina, enjoy your trip. Don’t be backwards in asking for a wheelchair when in Spain and Scotland. Look out for a group of Aussie cyclists. GS it joining a cycling group in Spain.

Isn’t it nice to do something different Chookie. We once took DH’s Mother up to the city late at night to have a pie floater from a food van in front of the Adelaide Casino just so that she could have that experience for the first time.
Judy, so true.  While we waited for our order, they gave us a cup of lentil soup. I’ve given most of the Minestrone away so will make some of the lentil  soup. Several different versions online. I could taste cardamom and cumin with a little heat. I’ll look for a recipe that has these.

Cookie how about this. I cooked the kabobs in the machine or 15 mins. They were bought ones. About a teaspoon of fat came out. I split the Kabobs in half for the roll. I’ve made them for GS, but of course tried on. A good alternative to sausage rolls.

Judy, when I made this I thought of you.  Yes you could easily blend it.

Thanks Judy.
Made RTE Minestrone Soup. Lovely, especially with this cold weather. It’s very thick and more of a meal. I added my small roll garlic croutons. The flavour excellent. I made it in the TMX.
