yes it is very tasty :)

the basis of this recipe is off a packet of pasta, but I made 1 alteration been the cheese as the kids wouldn't eat it with feta, it has a creamier texture and not as bitter flavour. 1 of the family favourites in this house

Vegetarian / Spinach Canelloni
« on: June 19, 2011, 07:18:24 am »
Spinach Cannelloni
feeds 6+ people depending on how much 1 eats lol

Ingredients:
2 packets of frozen chopped spinach
2 tubs/packets of Philadelphia cream cheese (roughly 500g in total)
2 cannelloni packets or 1 lasagna sheets packet
3 egg yolks
1 tsp nutmeg (I just guess amounts every time)
2 garlics crushed (optional, but really nice with it)
2 cups of grated cheese (I guess amount every time)

Sauce
2 tins of crushed tomato's
1 tbs basil
2 tbs olive oil

Preparation:

Preheat oven 180 degrees

In a saucepan place a knob of butter and spinach till thawed
 in the mean time....

Grate 2 cups of cheese then set aside
mince garlic, add egg yolks, phili cheese, nutmeg 1.5 cups of the grated cheese and blend on speed 4  :-: till mixed together, add spinach once it is thawed and blend again on speed 4  :-: till mixed together

Clean the saucepan that had the spinach in and add oil, crushed tomato's and basil, bring to the boil

Grab a lasagna dish and layer it with the tomato sauce mix to cover base only
fill cannelloni shells and single layer till finished then pour remained tomato mix over the top and sprinkle with the remained 1/2 cup of grated cheese and bake for 30-40 mins till pasta is soft and enjoy

I use fresh lasagna sheets and layer it with tomato mix to cover base, 1/3 spinach mix, layer with pasta, 1/3 spinach mix, pasta, last bit of spinach mix, pasta then tomato mix and cheese, bake till cheese has browned :)

Also, I just guess amounts for the nutmeg, grated cheese, alter to suit each taste, I never add salt  but you could add pepper and salt if preferred

This is requested by my kids every week for the past 7 yrs

Will post pic once I make it again.

WW is an omen to me, every time I join I might loose about 1-5 kgs, then slowly gain, and then I find out I am pregnant. This happened 3 times now, so unless I am planning number 4 I am staying clear of the place lol
That and if I break my toe, then I know I am preggers lol

Good luck with WW, I found if you serve up on a say a side plate, you looked like you were getting more food, but really getting less lol.

Not that I should be dishing out advice, my skinny me is dying by suffocation in my gift wrapped body of fat lol

thanks Cookie

instead of coconut have you tried rolling them in chocolate sprinkles? I was thinking of replacing the rum with oj as it said and also the coconut for the kids. And of course some proper rum balls for us adults lol

with weetbix? sounds interesting, what are they like Robyn?
