Title: Easiest Ever Coconut Chicken Curry (with photo)

This is one of our favourite dinner recipes that I have converted for the Thermomix. It’s a chicken curry, which is very mild and based on a coconut cream sauce – even my 2 and 5 year old eat this.  Even better the sauce is made in under 2 mins so it is super quick and uses ingredients that we have in our pantry

Ingredients
500g chicken breast, cubes
1 onion, peeled and quartered
3 cloves garlic, peeled
1 small green capsicum
Small can of tomato paste 140g
1/2 can of coconut milk
Pinch of salt
2 tsp of mild curry powder
2 tsp of Garam Masala
1/2 tsp cinnamon

Method
Place the onion, garlic and green capsicum in the Thermomix bowl. Blend speed 8 / 10 secs.

Scrape down the sides of the Thermomix bowl and add the tomato paste, coconut milk, salt and spices and blend speed 7 / 10 secs.

Scrape down the sides of the bowl again and add the chicken cubes. Cook for 20 mins / 100C / Reverse + speed 1.

Serve with Basmati rice and coriander.

It’s not my recipe, I found it somewhere on the internet sometime ago but unfortunately I didn’t record the source. We’ve been using it for so long now, and it is so easy that I had to share.

I don't have a can in the pantry CC but I have one of those small plastic packs and that is 140g.  Hope this helps.

I have just made this , very yummy, I put in a 440 can of diced tomatoes instead of the tomato paste so I have lots of juice, just had some juice over my left over veggies from last night for my lunch , thanks Snappy I will be making this again.

So your dish would have been a bit sloppier (for use of a better word) than snappy's AB and the juices would have been soaked up by the rice?  Did you take a photo?

I haven"t cooked the rice yet Judy will do later for my dinner, no photo"s I can't get them to work guess I'm going to have to get that tapatalk is it easy to use,? I'm hesitant about doing new things.

I can't reduce the size of my photos either Brenda and they come out sideways but the forum on tapatalk on the ipad is easier than on the website, (I found anyway)

Ab I use tapatalk hd and its very easy to use .. Add photos etc.. There is a new version out tapatalk 2 but its no diff from one well only slight changes not worth it..

I made this for dinner tonight and it is lovely and mild. With exception for 2 teaspoon of cinnamon (I got the garam masala and cinnamon packet mixed up), I followed the recipe to a T. However, mine wasn't as thick as yours Snappy. I had a lot of curry sauce. Do you leave the MC off or on Snappy? I left mine on so that may be why.

 I also added half a bunch of chopped coriander at the end and served it with coconut saffron rice.

The flavour is really lovely so will be making it again for DS3.

I often use it as a quick week night dinner as most of the ingredients are on hand.

MEP I cook with the measuring cup off so that's probably why mine is thicker.

Thanks Snappy. I will try with MC off next time. I normally always leave on unless specified to do so otherwise, plus I'm also concerned aobut meat not cooking thoroughly if heat is lost due to MC being off. Your pic looks v nice though.

I love, love, love this recipe!!! It is a firm favourite with all family members. Thanks Snappy!  :)

I've tweaked it a little to suit our tastes along the way.

I use red capsicum and a full 400g tin of coconut milk. I chop the onion, garlic and capsicum in the bowl and then saute with 30g oil for 4 mins/100 deg.  I add the spices and cook them off for another minute. I add remaining ingredients (except for chicken), blend for 10 sec/speed 7, scrape down sides and cook for 12 minutes/100 deg/speed 1. I then add the cubed chicken and cook for a further 6 minutes/100 deg/reverse speed 1.

mmmm yummy! I use a full can of coconut milk however as i made a mistake the first time and tipped it all in it was delish! So purposely making the same mistake this time! Used chicken thigh and red capsicum as its all I had, will serve with rice and papadams. Thanks for sharing! :)

This looks like a nice one to try for the kids, will be giving it a go - just a thought: Chicken thigh meat often gives a more tender/moist result than breast in curries (it's far more forgiving) and it's also cheaper too!

I made it last night for my girls and we all enjoyed it.  A few alterations in keeping with what I had in the cupboard  ;D
400gm can of carnation lite coconut milk, potatoes and carrots instead of capsicium and then I realised that I didn't have any curry powder :-)) So I replaced that and the garam masala for 2 tabs of red curry paste - still delicious!!!!
So this is definitely a very versatile and forgiving recipe and one the kids seem to love!!!!

Sooooo good! Everyone loved it :)

Made a couple of minor adjustments - used whole tin of coconut cream and used an entire zucchini in place of the capsicum (my husband can't eat it). Once cooked, I transferred to Thermoserver. Then cooked brown rice in TMX for 35 mins, adding Varoma with beans and broccoli for last 10 mins.

I made this tonight and we loved it.  It sure was quick and easy.  I had a lot of sauce, same as other reviewers.  I don't think I actually  put cinnamon in - the jar was unmarked and I tried to fool myself that it was cinnamon, but I really don't think it was!! 

I am going to make this again and again, trying other reviewers suggestions and alterations and also using cinnamon from a labelled jar!

I made this for the second time tonight & it's definitely made its way onto the family favourites list including my 13 month old daughter 😄

I added more coconut milk so the curry flavour was a bit less for my daughter & served with couscous.

I do JD but that's because I don't like thigh.  I'm sure it would work the same with thigh fillets if you prefer.

I have just made this for tonights dinner and I can't stop sampling it. :P :P  It's delicious.

I added some carrot, potato & a bit of zucchini as others have done and then browned my diced chicken pieces first as DH doesn't like what he calls "boiled chook".  Goes way back to his mothers cooking where any chicken dish was made with boiled chicken.  Yukkkk.

I made this last night. When it was done, I felt it needed something else, so added a tablespoon of double cream and two tablespoons of desiccated coconut. Yummy and so quick and easy.

Thanks Snappy again for the recipe.  I had in the freezer shredded chicken & vegetables from a chicken stock/soup recipe I had previously made, added the tomato paste, coconut cream and spices.  Original intent was to put it into ramekin's top with pastry as pies but DH & I were too hungry to wait so we toasted some bread to have with it instead ... quick and easy  ;)

With the garam masala, is it the pepper free one? I have it with the pepper but it's very hot. Should I just halve the quantity of it than?

Made this tonight...implemented Chelsea's tweaks, used coconut cream instead of milk.
I upped the chicken to 1kg...yummy.
Served with Tenina's coconut waffles, instead of rice for a change.
