Makes 3 large cocktail glasses - prepare as required.
2 cups chopped fresh or small frozen pieces of watermelon, mango or strawberries
1/2 cup white rum (110g)
1/2 cup lemon juice (110g)
2 tblspns castor sugar
2 cups ice- cubes (260g)
Place all ingredients into the TM bowl and blend for 1 minute on speed 8 or until all ice is crushed (this will depend on how sharp your blades are). Using the spatula as you do when making sorbet will help here.
Serve in large cocktail glasses with a wide straw. If using frozen fruit the mixture will be like a thick slushy and hard to drink at first. Within a few minutes it will become easier to drink.

Thanks Judy, I have some frozen watermelon chunks in the freezer and was wondering what I would do with them!

Time they came out MJ ;) ;) Treat yourself. This daiquiri is cheaper to make than the one in the EDC as that uses 60g cointreau as well as the rum.

Thanks for this recipe Judydawn! My husband suggested that it was cocktail weather (very warm here in Phillip Island) and I checked in the EDC, but alas no triple sec or cointreau in the cupboard. Did a search on this forum and landed on your recipe ... so far we have made strawberry and banana daiquiris . . . yum, yum! I'm eyeing the fruitbowl about what to try next! Thanks!

My recipe is very similar to yours - I use 50g of sugar(which I blitz before I add the other ingredients), 250g of strawberries, 1 MC of white rum and 400-500g of ice cubes. ;D

i made a triple batch with the white rum, lemon juice and castor sugar and will keep it in the fridge, then just add the rest when needed, to easy :-))

Ah, I found it - the note on the calendar that is. Next step was to be on the 28th December - I should look at my calendar more often Uni :-)) Wonder where I put the note on what to do next though :P

did you use 300mls of vodka?

I have no idea Uni, I have found the bottle of vodka with grated lemon rind in it, will measure it out.

I presume that Frank was persuaded to go and buy the white Rum Uni. ;)

for 250mls i would add 200mls of sugar to 350mls of boiled water and stir until dissolved let cool then add the strained vodka, store in the freezer
you can have a little taste just to check ;), if to strong add some more water

Uni, I made the syrup for the limoncello this morning and have had the bottle in the freezer all day. I have just gone to test it and most of it has frozen - there is a bit of liquid but I didn't expect it to be that frozen ??? ??? I followed your quantities and had 250 mls of the lemon/vodka mixture mixed with the finished quantity of 500 mls of the sugar syrup. Does it have to be kept in the freezer, why not just in the fridge? Also, how big are the glasses you serve it in? It is fairly strong so I figured just one of those tiny liqueur glasses and I mean very tiny as it certainly has a kick ;D

mine doesn't freeze at all JD, you could keep it in the fridge but traditionally its kept in the frezzer same with the limoncello glasses

Who has room in their freezer for drinks and glasses ??? Love your limoncello glasses, are they bigger than I think they should be? How many mils do they hold, that would be easier.

i have broken all of my limoncello glasses (photo from the net ) :( i think they hold about 40 mls ;D
does it taste nice JD ?

I agree with you CC but it looks like Uni has her priorities right. As I thought Uni, it is served in very small glasses and I had just the thing for this special drink even if it is not the proper limoncello glass. I have never used these glasses before. It's very nice thank you Uni and is probably the only drink I have ever sipped :-))

Here's Uni's instructions from "what are you cooking today" Kathryn. I've now put a copy in Non TMX recipes.
Can you get your hands of pure alcohol? Or you can use vodka
300mls of alcohol
Zest of 3 large lemons (unsprayed)
400mls of boiling water
200 mls of sugar
Soak zest in alcohol for 7 days (i do 5 days only)
Mix water and sugar let cool
Strain lemon zest and add alcohol to the cooled water and sugar mixture
I will only use lemons that have not been sprayed with any chemicals (backyard one are the best) i have tried shop bought organic lemons was not happy with the taste of the end product.
For sambuca just add ½ bottle of queens aniseed essence or sambuca essence from an Italian deli, to the alcohol

Has anyone got any more recipes for using up watermelon? I'm going to cut into chunks and freeze and then should be ready to add to some drinks - please let me know of anything that springs to mind

The peaches from my parents tree are dropping in the warm weather. In the interests of not wasting fruit, I have been cutting off the bad squishy bits and composting them. This has left me with chunks of perfectly good peach flesh which I have turned into delicious daiquiri's. Waste not, want not! Hic.
Last night I substituted 1/3 of the peaches with frozen raspberries. They were divine. I love summer holidays.....
